I eat good food and I cannot lie.
No but seriously, I really do eat good, delicious, so super yummy food. Like 95% of the time. And since it has been a while since you’ve seen some of my daily eats, lets dive right into a Meals and Snacks Lately post via my iPhone and Instagram.
Breakfasts
This breakfast is still going strong. Ground meat, leek greens, plantains, cauliflower rice, and tons of seasonings + guacamole on top. I love, love, love it. I have been loving sweet potato rounds on the side, too!
My banana-free chia pudding eaten out of a giant bowl. Of course I had to go and make it contain banana by adding banana slices on top. Totally counterproductive, I know. A big dollop of sunflower seed butter was a must, as well.

Lunches
I am obsessed with this meal and it tastes just as delicious as leftovers. You must try this ginger-lime sticky chicky and serve it over a bed of cilantro lime cauliflower rice. Of course roasted brussels taste delicious on the side.
I have been dabbling with eating eggs again these past few weeks and so far I have not noticed any worsening of my symptoms, so for now they shall stay. One thing I was so excited to be able to make again was homemade mayo. I used it for a batch of tuna/salmon salad that I served on butter lettuce leaves. The roasted brussels sprouts paired perfectly on the side.
Dinners
There are those eggs again! I have been loving frying them in red palm oil because it gives them a bit of a buttery taste. On this particular day I also fried chopped rainbow chard the same way for the exact same reason. One other thing I have become obsessed with is topping baked Japanese sweet potatoes with coconut butter and cinnamon. It legit tastes like eating frosting on a tator!
One of my favorite things to make for dinner is meatballs. These are especially delicious. I almost always pair them with sauerkraut and some veggies. On this particular evening it was crispy kale and boiled fresh green beans.
Snacks
If you haven’t tried this snack combo yet, you need to! I slice a ripe banana and freeze it a few hours before my night-time snack. Then I top it with some form of seed butter. This time I used my pumpkin seed butter. It is the best late night sweet treat.
Speaking of pumpkin seeds, I also love snacking on them in their raw form. These would have been extra bomb with some dark chocolate.
I proclaimed this as one of the best snack combinations on Instagram. Plantain chips + guac. It doesn’t get much better than that.
