Happy Wednesday my favorite veggie lovers!
I hope your week is off to a great start. I started my new job last Thursday and so far so good. I have a ton to learn, but everyone has been very nice which has helped. I also love the atmosphere and am full of energy the second that I step on campus. Even still, I am a bit stressed with all of the newness. But I am trying to remind myself that being overwhelmed at first is normal. It would be pretty boring if it wasn’t a challenge, right?
Despite this big career change, I have been sure to continue eating delicious and healthy foods. I have also been sure to make my family and friends an even bigger part of my days now that they are so close by. This past Saturday I decided on a whim to head home for about 24 hours. I wanted to see Jeremy, my parents, and my puppy dogs! I just so happened to eat a lot of delicious food along the way, too.
What I Ate Wednesday: October 7, 2015
I started my day with a grocery trip to Lucky’s Market. By the time I arrived back home, I was starving. I whipped up every single thing that I was craving that morning: a chicken and apple sausage served with Bubbie’s sauerkraut, baby carrots, and a ripe banana with almond butter. I am trying a little reintroduction of almonds to see how my body reacts. I am hoping for all good feelings.
Once breakfast was over, I made the hour and twenty-minute drive to my hometown. After some puppy love and chatting with my mom, I whipped up lunch with the food I brought with me. I baked a purple sweet potato in the oven (seasoned with coconut oil and cinnamon) and topped it with more almond butter. I also sautéed half of a bunch of kale and steamed brussels sprouts from the freezer. Veggie overload? No way! This was super delicious and totally hit the spot.
A couple of hours later, my mom and I went on a walk. I snacked on an organic Red Delicious apple along the way.
Once we arrived home, I downed some water and half a bottle of this kombucha. This was my first time trying the citrus flavor and I loved it. I will absolutely be buying it again.
My parents treated Jeremy and me to dinner at a local restaurant called Atlas. I spoke with them ahead of time and they were super accommodating to my dietary requests. I ordered a seven ounce Wagyu beef burger with only salt and black pepper. I had it served over a bed of lettuce with onion. I chose asparagus for my side and had it steamed instead of cooked in oil. Everything was really delicious and I loved the local, farm-to-table aspect. I will absolutely be returning for more meals in the future.
Jeremy, my mom, and I finished out the evening by watching Pitch Perfect 2. I munched on some of these plantain dippers during the movie. These were quite delicious and the perfect potato chip replacement. We all enjoyed the movie, but I think everyone would agree that it was not nearly as good as the first one.
That’s a wrap for a weekend day of eats back home. Simple and delicious, thank you very much!

Lots of yummy eats! I hope adding almond butter back into your diet goes well for you!
So far, so good!! 🙂
It makes me so happy to hear how well this change and move are going for you. It’s not always easy moving far away, but your handling it with such grace. Good for you… and good for you on continuing to get healthy food in as well.
Thanks so much, Jessie! That means a lot 🙂
How nice it must be to go from a super long drive home to just 1.5 hours! I wouldn’t fault you if you found a reason to go every weekend. 😀
Your lunch looks like something I’d whip up for myself if my husband was out of town, haha! Yes to all the veggies!
Yes!! I SHOULD find a reason to go home often… and that won’t be difficult! 😉
Congratulations on starting the new job, and that restaurant looks like a keeper! To be so accommodating is fantastic 🙂
Thank you!! And yes, it was great! I’ll definitely be back.
Plantain chips are always a winning snack 😉
YES! They are so addicting.. once I open a bag I have zero control!
That is my favorite kombucha flavor! I need to get my hand on those plantain chips… I bet they’d rock in some guac.
Plantain chips are amaaaazing in guac. There is literally no better combination!
Whenever I start a new project at work, it’s always scary/challenging/exciting at the same time! I’ve been on the same project for about a year now and I’m starting to get the itchy feeling to try something new..
It’s always hard to step away from your comfort zone and try something new… but I say go for it! The worse thing is being bored/not challenged :/
Hi Hannah! How exciting that you have a new job. I must say, I cannot find purple sweet potatoes anywhere and am DYING for some!
This was literally the first time I had seen purple sweet potatoes in FOREVER, so maybe there is hope for you!
I’ve been wondering about that citrus flavor- glad to hear you liked it!
It is really good! You should definitely try it ASAP.
i love eating my random cravings at breakfast too! it doesn’t matter if its pizza and oatmeal, i eat them both!
Haha, I love it! Plus, breakfast pizza is the best way to enjoy it 😉
I’d definitely say its MORE than normal to feel a little overwhelmed/anxious when starting a new job, but I’m so glad its also feeling good and filling you with energy! I’m also glad you can now make these whim trips home.. absolutely nothing beats family time. Here’s hoping the almonds are kind to you!
Thank you for so many positive vibes! 🙂
I absolutely love almond butter, but now I’m loving TJ cashew butter! It’s addicting….
Cashew butter is crazy good, right?! I hope I can introduce that again soon too!
OMG plantain dippers..now that is NEXT LEVEL! Thanks for sharing your finds 🙂 Hope introducing almond butter goes well, I had to let go of my nut butters as I found out from my ALCAT that I am allergic to almonds and peanuts :0 It was very depressing but I have since moved on to other fun foods! xo C
That’s a great attitude to have! If there is nothing you can do to change it, you might as well look at the positives and what you CAN enjoy 🙂
Yep, my immature mind is laughing at your breakfast sausage. And banana. LMFAO.
Haha!! Gotta keep it super inappropriate in the morning, right? 😉
Sweet potato with almond butter sounds so delish! I can’t believe I haven’t tried it yet!!
Oh my gosh, you MUST try it! It is easily one of my favorite combos ever!
