Happy Wednesday my favorite veggie lovers!
I hope your week is off to a great start. I started my new job last Thursday and so far so good. I have a ton to learn, but everyone has been very nice which has helped. I also love the atmosphere and am full of energy the second that I step on campus. Even still, I am a bit stressed with all of the newness. But I am trying to remind myself that being overwhelmed at first is normal. It would be pretty boring if it wasn’t a challenge, right?
Despite this big career change, I have been sure to continue eating delicious and healthy foods. I have also been sure to make my family and friends an even bigger part of my days now that they are so close by. This past Saturday I decided on a whim to head home for about 24 hours. I wanted to see Jeremy, my parents, and my puppy dogs! I just so happened to eat a lot of delicious food along the way, too.
What I Ate Wednesday: October 7, 2015
I started my day with a grocery trip to Lucky’s Market. By the time I arrived back home, I was starving. I whipped up every single thing that I was craving that morning: a chicken and apple sausage served with Bubbie’s sauerkraut, baby carrots, and a ripe banana with almond butter. I am trying a little reintroduction of almonds to see how my body reacts. I am hoping for all good feelings.
Once breakfast was over, I made the hour and twenty-minute drive to my hometown. After some puppy love and chatting with my mom, I whipped up lunch with the food I brought with me. I baked a purple sweet potato in the oven (seasoned with coconut oil and cinnamon) and topped it with more almond butter. I also sautéed half of a bunch of kale and steamed brussels sprouts from the freezer. Veggie overload? No way! This was super delicious and totally hit the spot.
A couple of hours later, my mom and I went on a walk. I snacked on an organic Red Delicious apple along the way.
Once we arrived home, I downed some water and half a bottle of this kombucha. This was my first time trying the citrus flavor and I loved it. I will absolutely be buying it again.
My parents treated Jeremy and me to dinner at a local restaurant called Atlas. I spoke with them ahead of time and they were super accommodating to my dietary requests. I ordered a seven ounce Wagyu beef burger with only salt and black pepper. I had it served over a bed of lettuce with onion. I chose asparagus for my side and had it steamed instead of cooked in oil. Everything was really delicious and I loved the local, farm-to-table aspect. I will absolutely be returning for more meals in the future.
Jeremy, my mom, and I finished out the evening by watching Pitch Perfect 2. I munched on some of these plantain dippers during the movie. These were quite delicious and the perfect potato chip replacement. We all enjoyed the movie, but I think everyone would agree that it was not nearly as good as the first one.
