Happy Wednesday (though it really feels like Friday), friends! Only four hours of work stand between me and a four and a half day weekend. Noon cannot come soon enough. But before we get the Thanksgiving party started, let’s stop by the What I Ate Wednesday party! It has been a couple of weeks since I have joined in, so I am excited to get back in there. Check out What I Ate Wednesday Saturday:
Breakfast
Breakfast #1 was eaten at 6:20 a.m. before heading to the Y to swim laps for the first time in over a year…talk about a humbling experience!
A green monster smoothie with unsweetened vanilla almond milk, vanilla Vega One, frozen banana, frozen blueberries, frozen cranberries, and a whoooole lotta spinach!
After coming back from my workout and hopping in the shower, I made cocoa blueberry buckwheat pancakes.
I topped them off with peanut butter and more blueberries. These were awesome. Buckwheat flour and I are quickly becoming best friends.
Snack
Lunch
Roasted brussel sprout, barbecue, and cheddar “cheese” pizza (more on this in a future Friday Favorites post). I ate two more slices after this one! 🙂
Afternoon Snacks
Half of a bag of Salt’n Vinegar almonds (absolutely obsessed with these)…
…mixed with some raisins. I love the salty and sweet combination of the two. It is funny to think that I actually love raisins when I used to hate them. It’s crazy how our taste buds can change.
I also ate a sliced apple dipped in some crunchy Nuttzo nut and seed butter and drank an orange La Croix sparkling water (unpictured).
Dinner
For dinner, I ate some spinach squash fritters (more on these in a future Friday Favorites post, as well!) topped off with a runny dippy egg. SO good!
Evening Snacks
In the evening I snacked on a veggie/hummus plate…
…and a bowl of strawberries, black grapes (still obsessed with these!), and a Cutie. Is anyone else super excited about the fact that Cuties are back?
I finished the evening off with a giant bowl (it was more than just this in the picture!) of air-popped popcorn. I topped it off with coconut oil spray, sea salt, nutritional yeast, onion powder (if you haven’t added this to popcorn yet, you need to!), curry powder, and dill. Sounds like a strange combination, I know, but I am hooked on it.
And that wraps up a full day of my eats. Have a great Wednesday! I hope you all have short work days like I do and can rest up for a full day of cooking and eating tomorrow :).

Ummm let’s talk about how much I love your cup with the smoothie! I can’t wait to bust out all my Christmas stuff tomorrow night … so ready. haha I hope you have a wonderful wonderful Thanksgiving!!
Isn’t it SO cute? My best friend LOVES penguins so I always think of her when I use it :).
I used to hate raisins as well. I remember getting them in my Halloween stash and giving the stank eye to the people who were handing them out. But now? Love em! And you’re right — they’re SO good paired with almonds.

Love the look of those buckwheat pancakes! I agree with you, it is strange how you’re tastes can change over time. I’m hoping this time comes very soon for some really picky kiddos. 😉 Have a SUPER great Thanksgiving!
Haha, don’t worry …there is still hope for them! I was a picky eater until just a few years ago and I turned it all around :).

Haha, definitely not! They are one of the best wintertime foods.
The salt and vinegar almonds are my FAVORITE and now that they’re gone I can’t find them anywhere in the stores! If you find them somewhere, let me know!

They are so, SO good!! I have had a really hard time finding them in the stores, though. Those are leftover from my HLS swag bag.
Well, your egg turned out so much better than mine! There definitely is an art to making a fried egg and I totally haven’t gotten that down yet. Ha!
I’ve still been on this major pancake kick! I made them Monday morning and this morning for breakfast. I love how you can do so many different things with them. Adding blueberries is always a win! I love your pizza! What an interesting and delicious combo!
Pancakes are definitely one of the most versatile AND delicious foods! I’m totally hooked on them right now.
When I was a kid we only ate buckwheat pancakes. That was the kind your Granddad wanted. Who knew he ate so healthfully.

That popcorn sounds good! I love adding nooch and spices to popcorn. Swimming is really hard! I was swimming some this spring when I was in the boot, I was always exhausted at the end. I hope you have a great half day today and thanksgiving tomorrow!
Swimming is definitely tough! It’s one of those sports that is a lot more difficult than it looks!

Yes, you definitely should! And now that you say that, I am thinking the popcorn/raising combination would be really good. Salty and sweet is always a winner to me :).

Yes, swimming is SO tough, but it is SUCH a great workout! Plus, I love that I don’t sweat while doing it ;).
