sliced banana + crunchy almond butter
Part 2:
No, not the whole pan, but a third of it topped with a fresh peach and peanut butter.
Snack
wasa crackers + herb and chive tofutti cream cheese + tomatoes + sea salt
Lunch
lentil and vegetable soup + salad w/ cucumber and sundried tomatoes + homemade tomato basil dressing + 1 clementine
Snacks
Sneaky Pete’s Mango Oat Beverage (they kindly sent me some to try!)
Dinner
twice-baked southwestern potato + another salad on the side
Snacks
air-popped popcorn w/ coconut oil spray, sea salt, nutritional yeast, curry powder, and dill

I LOVE stuffed potatoes. Any kind! Happy WIAW! My daughter can eat hummus like crazy. She’s only 2!

Coconut oil and nutritional yeast are AMAZING on popcorn. I’ve never added any herbs or spices, but I’ll have to give it a shot one of these times…

The pumpkin oatmeal bake sounds so good! As does air popped popcorn with nutritional yeast, I have been having that as a snack the past few nights.

Funny story about the TJ’s kale chips, it put my friend’s husband in the hospital because the ingredients had a little bit of tree nuts in it. Actually, it’s not that funny on paper but I guess it was a you-had-to-be-there situation. 🙂

How do you like the tofutti cream cheese? I debated on buying some the other day, but the price tag steered me away.. especially since I wasn’t sure how it’d be.

Girl those kale chips look like the bomb.com! My in-laws are coming for the weekend and I’m trying to think of what breakfasts to make them…I’m thinking pumpkin oatmeal bake like yours might be a good idea!
The kale chips are AMAZING!! I easily eat a bag in one sitting ;). And yes, the oatmeal bake is SO easy to make so it would be great!
Oh I LOVE Sneaky Pete’s! I haven’t had any since they changed the packaging though. [I imagine what’s on the inside is still the same, and that’s always what counts, right?] I am now craving a baked potato covered in vegetable bean soup. Thank you.
