I hope I am not jinxing myself by saying this, but this week is actually going by fairly quickly so far. Maybe it is because I had a short work day on Monday? Or maybe it is because I am so excited for the three-day weekend coming up soon? Either way, I’ll take it!
I’ll also take some seriously delicious eats. Today’s What I Ate Wednesday post is taking us allll the way back to my eats from last Thursday. I’m not sure what it was about that particular day, but for whatever reason I felt the need to capture my food.
What I Ate Wednesday: May 20, 2015
My morning started out like every other weekday morning with a green smoothie made in my new favorite kitchen appliance: my Vitamix! In the mix was unsweetened vanilla almond milk, cold water, almond butter, chocolate Vega One, frozen banana, frozen zucchini, and tons of frozen spinach (<– affiliate links). It was as tasty as ever!
I took my smoothie to go on the way to work and also packed a second breakfast for the day. I can never make it through the work morning with just one breakfast. I made chocolate chia seed pudding, which I topped with sunflower seed butter at work. I’m working on perfecting this recipe and then I will share it with you here on the blog.
My lunch did not look nearly this pretty, as it was in a glass Pyrex container, so I thought I would share the more appetizing photo with you! This meal was to do for. I’ll be talking about it more in an upcoming Friday Foodie Favorites post, but let’s just say it involves spaghetti squash, Italian chicken sausage, and spaghetti sauce. I actually even topped mine with a bit of guac when I was at work since guac makes everything taste a bazillion times more delicious.
My usual afternoon snack suspect: an organic apple!
Dinner was another crazy good meal. I topped a bed of Romaine lettuce with salsa, scrambled eggs, and tomatoes. For some reason, I have been loving scrambled eggs on my salads lately. I also served my salad alongside some homemade grain-free tortilla “chips.” This is another recipe that I am working on and hope to share with all of you soon.
The final thing I ate last Thursday was my new favorite snack: plantain chips dipped in guacamole. You guys, this combination is ridiculously good. Even if you are not trying to avoid grains, I highly recommend that you give it a try.

You can never go wrong with something sweet!
Night time snacks are pretty much a necessity! Last night’s was a rice cake + pb + banana with almond milk. I wish I could take that salad with me for lunch!
Rice cakes with nut butter and banana are SO good! I love adding cacao nibs on top too! I’ve also done rice cakes with nut butter and strawberries… crazy good!
Ugly lunches > the best lunches 😉 That looks delicious regardless! I’m craving a smoothie now!

Mmmm, Wholly Guac is so good! I love that stuff. But now you’ve also got me wanting a chocolate smoothie. Allllll the chocolate! haha
Wholly Guacamole is the best thing ever. Homemade guac is great, but I hate when it goes brown. Those little packets are the perfect solution!
Okay, I have never tried scrambled eggs on my salads before – now I feel like I need to try this asap! And yay for spaghetti squash! Looking forward to hearing more about that recipe!
Eggs on salads are SO good! I love them scrambled and fried. They seem to work the best on Mexican-style salads for the heads up. I hope you try it 🙂

I LOVE plantain chips! They are for sure one of my favorite snacks! They used to have them in the vending machine at work, but now they don’t anymore. Such a bummer!
Well it sounds to me like your work had better get them back! I would be so sad if I had them and then all of a sudden they were taken away from me 🙁

Spaghetti squash casseroles are delicious, I think especially out of a pyrex 🙂 I make my own plantain chips but would love to try those to give myself a break!
I NEED to try making my own plantain chips! I have a dehyrator, so I just need to do it! I totally understand the feeling of wanting to be lazy, though, and just buy them 😉

A vitamix!! So cool! I’m about to get one actually but I’d love to know whether you think it’s as good as all the hype:) Did it leave any green flecks of spinach?? Love all your meals!
The Vitamix is SO worth all of the hype. No green specks like I used to have in some of my old blenders. I’m IN LOVE with it! You should check out the one that I bought. I may be partial, but I think it is pretty perfect. I love having the variable speeds options!
I also love scrambled eggs on top of salads! It sounds a bit strange but it’s so tasty, especially when combined with Mexican-inspired ingredients like you did here. Yum.

I actually read something a few weeks backs saying that putting eggs on your salad helps you digest the greens better or something. No idea if it’s true but I always want to eat more eggs…

I usually need a snack in the evenings, sometimes it is just a piece of chocolate, sometimes it’s an apple, sometimes it’s a bowl of oatmeal. It just depends.
I like that mentality! It’s good to listen to your body and what it is craving!

Mmm that smoothie has just sparked some cravings for me! I am interested in the frozen zucchini, do you add it in for texture/taste/nutrition, etc? I love plantain chips and ate them by the dozen when I lived in the UK, but alas I cannot find them in Australia ):
My perfect night snack is greek yoghurt, granola and peanut butter. A way to my heart <3
I add the smoothie in the nutrition and as a way to use up leftover zucchini. I almost always seem to have some in my freezer!
And no plantain chips?? Boo, that stinks 🙁
I had my first plantain chips in Africa, homemade by Mama D., there. They were really yummy. I really need to buy plantains and make them again!
Favorite night snack is probably cottage cheese and nuts or yogurt and nuts! 😉
