It’s the first Wednesday of January, and I say we celebrate with a What I Ate Wednesday look at a day of Paleo eats (via my iPhone)!
What I Ate Wednesday: January 6, 2016
This has been my favorite breakfast as of lately. I essentially sautéed collard greens (I often use kale) with veggies and a chopped Epic bar. It is the best thing ever. I love it so much that I am thinking about doing a whole post dedicated to it. Stay tuned!
Shortly after breakfast, my dad and I stuck a turkey into the oven to roast. The turkey came free when we bought our Christmas ham. And since we loved the brined and roasted turkey on Thanksgiving so much, we figured we might as well make it again. Let the holidays continue!
The turkey was done just in time for lunch. I paired a few slices of it with leftover broccoli and diced yams roasted in coconut oil and cinnamon.
The afternoon was full of snacks, including baby carrots…
…an apple + mango That’s it. bar (love these)…
…and an original kombucha. It had been a little while since I enjoyed a bottle of kombucha, so I was happy to have it back in my life.
So sorry for the dark picture, but this is a perfect example of the awful lighting at my parents’ house! Dinner was leftover turkey, leftover sweet potatoes, and green cabbage sautéed in coconut oil and seasoned with sea salt, garlic powder, onion powder, and ginger.
I finished off the night with a handful or two of plantain chips. I am starting to think it isn’t a normal day unless plantains are involved!
Do you think I ate enough veggies on this day? Oh, probably! 😉

The turkey is beautiful. We should have throughout the year!
I love your breakfast and as I am considering starting the whole 30 soon, I will keep it in mind.

Your breakfast sounds so awesome! And I love turkey leftovers! Even though we weren’t going thanksgiving at our house, I grabbed our free grocery store turkey and I’m waiting for the ‘perfect’ time to use it, AKA when I know I’ll be super busy and need lots of leftovers!
Yes! That is the perfect idea. I already want to make another, and hope to get into the habit of doing so.. not just around the holidays.
I love that veggie-heavy breakfast! I’ve never tried an Epic bar, but sounds interesting!
It took me a few tries to like them, but now I am OBSESSED! The pork/bacon bar is my fave!
Yay for breakfast veggies! I had some too, this week – first time in a while. And double yay for kombucha. LOVE That stuff!
Kombucha is so seriously delicious. I would drink it every single day if I could.. that might get expensive though 😉

They are SO good! It’s crazy to think they only have 2 ingredients in them. You should definitely give them a try!
