This past Saturday was the epitome of summer. It was a Whole 30 Saturday at the lake. Doing the Whole 30 may not scream “fun,” but I made it work and had a blast with some of my favorite people.
Jeremy and I met up with Erin (and her husband, Josh), Jordan (and her husband. Ben), and Joanna (and her husband, Jeff) at Jeff’s family’s cabin at a lake just south of Omaha. We had a similar gathering last summer, and were so eager to do it all over again. Things started out a bit rainy and dreary, but we wound up with a gorgeous day!

Once our photo shoot was over, we got right to playing in the water.
One of my absolute favorite things to do in the water during the summer is to go tubing. Jordan and I went together, and we were lucky that Jeff was a nice driver and neither of us flew off. My goal is always to stay out of the water!
By the time late afternoon hit, we decided it was time to take a break from the water activities. We were hungry and thirsty, after all! I brought along two of my favorite Whole 30-compliant flavors of Blue Diamond almonds, which we munched on until it was dinner time.
I am pretty sure that Jordan, Erin, and I finished off the majority of the container of the Roasted Salted version. What can I say? They were addicting. Sometimes the simplest flavors are the best!
I also made sure to stay hydrated since it was quite warm outside. I whipped up a non-alcoholic Sparkling Berry Kombucha Spritzer with Whole 30-compliant ingredients since I was not able to partake in the beer or wine. This was a bit of an experiment that turned out so good! I’ll be sharing the recipe tomorrow, so be sure to check back.
While I love almonds and kombucha, those were not enough to make for a proper dinner. Luckily, we all contributed something to this delicious, summery spread, and had more than enough to eat.
Whenever I am faced with specific dietary restrictions, I always make sure to bring something that I can eat. I whipped up my own veggie tray and brought along a Greek yogurt dill dip (for everyone else), and homemade dump ranch for myself.
My plate ended up looking like this: a turkey burger from Trader Joe’s with yellow mustard, tons of fresh fruit, and raw veggies with dump ranch. I also had a couple of handfuls of plantain chips to round things out.
I have decided that doing a Whole 30 during the summer is challenging (hello, no alcohol), but it is also pretty great since grilled food is so easily made compliant. I did not feel like I was missing out one bit with this meal!
I was not kidding when I said that the day wound up being gorgeous. Look at the sunshine!
