Can you believe we are almost halfway through the month of January? Yeah, me neither! I am totally okay with this since January tends to be my least favorite month. I am already way over this bitter cold, and I am so ready for some Spring and Summer weather.
Despite the bitter cold weather, I have been attempting to eat as Spring and Summer-like as possible. If I eat freezing acai bowls and drink smoothies then it will make the hot weather come sooner. That is how it works, right? Ahh heck, that might just be wishful thinking. Either way, I ate deeeelicious food from all of the seasons this past Saturday. Let’s take a look!

Since it was a Saturday and all, my body was craving a homemade acai bowl. I ate a freezing cold bowl while all bundled up with a blanket, my heater, and a pair of slippers. I’ll do pretty much anything to keep on eating them.
Lunch was a tuna melt sandwich served with pickles on the side. I’ll have more on this one next week!
In the afternoon, I snacked on an organic pink lady apple dipped in Trader Joe’s crunchy peanut butter with flax and chia seeds. If you have not tried this nut butter yet, get on it!
As most afternoons on the weekend go, I drank a green smoothie around 4:00. In this particular smoothie was unsweetened vanilla almond milk, vanilla Vega One, frozen banana, frozen zucchini, frozen spinach (it helps make the smoothie EXTRA cold), and frozen spinach. Like acai bowls, I do not care if it is -10 degrees out. I will still be drinking my smoothies.
Saturday’s dinner consisted of the remainder of the vegan Caesar salad (more on this on Friday) I had in my fridge, chopped carrots, and a Hilary’s Eat Well adzuki bean burger. If you have not tried their veggie burgers, you need to. The ingredient lists are awesome and they are so delicious!
If you haven’t already figured it out, I am a bit of a creature of habit. I would guess I eat popcorn for my nightly snack about five days per week. I simply cannot get enough.
To balance out the saltiness, I ate some super sweet red grapes on the side.
There is a recent day of my eats! As you may have noticed, I have been alternating between a full day of eats and “recent eats” for my What I Ate Wednesday posts. What it mostly comes down to is whether or not I am able to remember to photograph a whole day of eats. Sometimes it happens. Sometimes it doesn’t. All that really matters is that I share plenty of delicious food with you, right?

Sometimes I wonder how in the world I can eat smoothies during Winter because I HATE being cold. The good taste must outweigh the coldness!
I love that peanut butter! I finished a jar recently and have been waiting until I run through a few more Peanut Butter & Co. jars before buying another one. You know my pb pantry is pretty stocked at all times lol.
Oh yes, I cannot imagine you EVER running out of PB!!! 😉
I have that peanut butter right now! It is so good! I love the little crunch of the chia and flax…and peanut! I’m obsessed!
Isn’t it awesome?? Crunchy peanut butter used to weird me out back when I was a picky eater. Now I LOVE the extra crunch!
Smoothies pretty much go out the window for me when it’s cold out. Our extra freezer is in the unheated garage. It’ll take a lot more than a tasty smoothie to get me to touch my feet to that cold, COLD pavement! I’ll just drool over your smoothies until we thaw out.
Now THAT is a good reason to not eat a smoothie during Winter. That just sounds brutal.
I’m going to come over and eat with you- your day looks yummy. Right down to the popcorn and grapes lol! I have been wanting to participate in WIAW but I keep forgetting to photograph a full day of my food- I have pics from several days, but not from one actual day haha.
Photographing a full day of food is REALLY hard to remember, which is why a lot of WIAWs for me are just a whole bunch of my recent eats. You could always take that approach so you wouldn’t have to remember every single thing eaten in one day.

That tuna sandwich looks fab – I only ever crave tuna when I’m pregnant (and can’t have it). It’s at the top of my list to eat after baby gets here haha

I loooove Hilary’s Eat Well burgers! They’re so deliciously crispy on the outside! Plus the ingredients are awesome. Looks like a lovely day of eats!
Aren’t they the BEST? I also love how they are a decent size so that I don’t feel like I am eating a skimpy dinner.
You ate well my friend! I love acai bowls too! One of my favorite things to mix with popcorn is chocolate. I sprinkle Enjoy Life mini chocolate chips in with my popcorn. Yum! Although, grapes are obviously a healthier choice. 🙂

We made tuna melts for dinner on Monday. Aren’t they delicious? Their the best on either sourdough bread or english muffins.

I’m the same way! I always eat frozen berries with my greek yogurt in the mornings or drink my icy smoothies after workouts, despite the freezing weather. They both just taste too good to get rid of. And it’s never possible to get enough popcorn! I could eat it every day myself.

I don’t care how cold it gets, I can’t give up my smoothies! I usually drink mine on the drive to work… with my mittens on! Haha – at least I know I’m not the only one still enjoying these cold beverages.
It’s ironic the things we will do! I normally drink mine at work all bundled up in my Snuggie! 😉
So just everything here looks so delicious. And I’m totally with you — who cares how cold it is? Smoothies are the way to go. In fact I think I said that to my mom today, “Maybe if I keep drinking summertime smoothies, it will get warmer!” Ha, maybe. But not likely.
