Can you believe we are almost halfway through the month of January? Yeah, me neither! I am totally okay with this since January tends to be my least favorite month. I am already way over this bitter cold, and I am so ready for some Spring and Summer weather.
Despite the bitter cold weather, I have been attempting to eat as Spring and Summer-like as possible. If I eat freezing acai bowls and drink smoothies then it will make the hot weather come sooner. That is how it works, right? Ahh heck, that might just be wishful thinking. Either way, I ate deeeelicious food from all of the seasons this past Saturday. Let’s take a look!

Since it was a Saturday and all, my body was craving a homemade acai bowl. I ate a freezing cold bowl while all bundled up with a blanket, my heater, and a pair of slippers. I’ll do pretty much anything to keep on eating them.
Lunch was a tuna melt sandwich served with pickles on the side. I’ll have more on this one next week!
In the afternoon, I snacked on an organic pink lady apple dipped in Trader Joe’s crunchy peanut butter with flax and chia seeds. If you have not tried this nut butter yet, get on it!
As most afternoons on the weekend go, I drank a green smoothie around 4:00. In this particular smoothie was unsweetened vanilla almond milk, vanilla Vega One, frozen banana, frozen zucchini, frozen spinach (it helps make the smoothie EXTRA cold), and frozen spinach. Like acai bowls, I do not care if it is -10 degrees out. I will still be drinking my smoothies.
Saturday’s dinner consisted of the remainder of the vegan Caesar salad (more on this on Friday) I had in my fridge, chopped carrots, and a Hilary’s Eat Well adzuki bean burger. If you have not tried their veggie burgers, you need to. The ingredient lists are awesome and they are so delicious!
If you haven’t already figured it out, I am a bit of a creature of habit. I would guess I eat popcorn for my nightly snack about five days per week. I simply cannot get enough.
To balance out the saltiness, I ate some super sweet red grapes on the side.
There is a recent day of my eats! As you may have noticed, I have been alternating between a full day of eats and “recent eats” for my What I Ate Wednesday posts. What it mostly comes down to is whether or not I am able to remember to photograph a whole day of eats. Sometimes it happens. Sometimes it doesn’t. All that really matters is that I share plenty of delicious food with you, right?
