WIAW: August 6, 2014 (Recent Eats)

Today is Wednesday and today I am linking up with Jenn from Peas and Crayons for What I Ate Wednesday.  WIAW is not about judgment, but is instead a way of sharing eats in order to inspire others and give them new meal and snack ideas.  I hope my recent eats do just that for you!

WIAW generalWhat I Ate Wednesday: August 6, 2014 (Recent Eats)

recent eats 4A tortilla pizza with red sauce, spinach, onions, red peppers, tomatoes, sauerkraut, and pineapple on a sprouted Ezekiel tortilla.

recent eats 2Cooked frozen peas.  I am so obsessed with these right now.  I have been eating them as dinner sides and for snacks.

recent eatsThis is my favorite quick and easy lunch right now.  When I am packing my lunch for work, I top an Everything bagel with hummus, Vegenaise, lettuce or spinach, onions, cucumbers, and peppers.  I also pack a tomato slice on the side (so the sandwich doesn’t get soggy).  This is the best combination.  Seriously.

recent eats 5So obsessed with blueberries right now.

recent eats 6More salads: tons of veggies, pineapple, lentils, ranch chia dressing… it is all so good.

recent eats 6Waffles with chocolate chips topped with peanut butter.

recent eatsI have not been eating these quite as often as before, but I am still loving on microwaved sweet potatoes topped with Justin’s almond butter (vanilla here) for a snack.

recent eats 5Another one of my favorites snacks: a sliced apple and Blue Diamond Toasted Coconut almonds.

recent eats 2This delicious breakfast happened again multiple times.  I promise I am going to share the recipe link on Friday!

recent eats 3My usual green smoothie, but this time with Vega’s Choc-A-Lot smoothie protein powder.  It is so good!

recent eatas 4Lunch this past weekend (and for a couple of days this week at work) were “chicken” nuggets (more on these later) dipped in ketchup and served alongside peas and grapes.

Isn’t eating healthy fun?  No seriously, I love it!

      I actually got it from a different resource online and did not use a Happy Herbivore recipe... though now you have me intrigued. I need to go back through my HH books again soon!

    Fresh blueberries are the bessssst. And I posted a sweet potato recipe today! It got me thinking about how I have done the sweet potato + almond butter combo in a long time!

      The dressing is actually from Hillary's! And the sandwich... well there isn't much to that other than the bagels, Vegenaise, hummus, and veggies... keeping things simple ;)

    Cooked frozen peas are arguably the best thing ever. Sometimes I center whole meals around them... I have problems. In the past week one thing I ate was salsa chicken. So simple!

    That bagel sandwich! I need one in my life! That sounds awesome - I put similar things on bread but I should really switch it up with a bagel sometimes! And your smoothie is so bright green - I love it!       You definitely should! I am SO hooked on Everything bagels right now. They are the best! I totally hear you on the smoothie thing. When I use blueberries it looks awful :/

    Everything looks so.darn.GOOD! It's been forever since I've had a tortilla pizza, but I seriously need to make one soon -- love those things! And blueberries. Omigosh I can't be trusted. I keep buying 'em, and they keep disappearing at an alarming rate :lol: Where the heck do they all go!?

    A local restaurant where I live just added tofu wings to their menu! I had those tonight alongside a (shared) beer pretzel & beer cheese fondue, and sweet potato fries!

    That everything bagel lunch is everything I want at lunch time! YUM! Do you put your tortilla pizza in the oven? Makes me want to make one with daiya! I've got to buy more ezekiel tortillas because they are so good! This week has been a lot of squash and tofu curry dish and last night was a massive plate of pasta with spinach, garlic, tomatoes, and olive oil!       Yes! I put the tortilla in the oven for about 3 to 5 minutes to crisp up a bit, top it, and then put it back in for about 8 to 10 minutes depending on how quickly the crust gets crisp. It would be awesome with some Daiya on it!

    I tried the Justin's maple-flavored AB for the very first time this week. I was trying to hold off because a jar of Justin's is just so spendy. Verdict - worth the money.

      It is definitely expensive, but SO worth it! I LOVE the maple but I think that vanilla flavor is my absolute favorite.

    Arghhh those coconut almonds are literally calling my name! They sound SO delicious and perfect as a snack! Loving all your fresh and tasty looking eats :)
