6 Unique Rice Cake Topping Ideas

When you take a peek into my pantry, there are a few things that you will always, always find.

Oatmeal?  Check!
Popcorn?  Check!
Nut butter?  Check!

And one other thing that I am quite fond of…

Rice cakes!

I kid you not.  From the time I moved into my apartment over two years ago, I honestly do not think there has ever been a time when I have not had rice cakes on hand.

Some people think rice cakes are “boring,” or that they are simply a “diet food.”  Not me!  I look at those crunchy, salty treats as the perfect vehicle for some of the best toppings.  I’ve said it before and I’ll say it again.  Rice cakes are easily one of the most versatile foods out there!

I love topping my rice cakes with nut butter, and I almost always serve my favorite chickpea/tuna/egg salads on them in place of bread.  Nut butter and salads are pretty traditional rice cake toppings, though.  And while I think those are awesome ways to eat rice cakes, there are tons of creative ways to eat them for breakfast, lunch, dinner, or as a snack.

2 TB ricotta cheese
1/4 cup fresh blueberries
drizzle of honey

Mini brown rice cake chips (cheddar or sea salt flavor)
A dollop of plain Greek yogurt
Chopped spring green onion
Coconut “bacon” (or tofu/tempeh “bacon” bits)

1/4 of a ripe avocado, mashed
sprinkle of red pepper flakes
sprinkle of sea salt
baby kale or arugula to garnish

strawberry jam*
sautéed spinach
fried egg (runny yolk is a must)
sprinkle of salt and pepper

*sub hummus in place of the jam for a completely savory version

banana slices

*Kim made this snack with leftovers from taco night.  What a perfect way to use ’em up!

      My favorites are always the sweet AND savory combos, but just sweet or just savory are 100% delicious too. Basically, you can top a rice cake with just about anything and it will taste good ;)

      Yes you sure do need to!! I love how inexpensive they are, and honestly pretty healthy. Of course I normally add tons of slightly less healthy toppings, so it equals out ;)

      I am seriously convinced that rice cakes are one of the most versatile foods EVER. I use them for snacks, lunches, dinners, and breakfasts. You really can't go wrong. I hope you buy them next time you are at the grocery store :)

      I REALLY need to start bringing rice cakes with me to work for emergency snacks. I already always have Sun Butter (for oatmeal and such) on hand, but the rice cakes need to be added! And thank YOU for such an awesomely creative idea!

    I definitely have not tried these combinations, and they sound so delicious! :D I was in surgery today and they mentioned that one of the nurses was on a rice cake diet and would basically just eat rice cakes all day. ;_; I need to find her and tell her to at least soup it up with other awesome ingredients so she'll get more nutrition and won't be so miserable. :[[

    I love making desert rice cakes! It makes the desert a little more healthy. One of my favorites is 1 plain os sea salt rice cake, with a tbs or two of peanut butter spread on top. Then I melt milk chocolate chips and drizzle the chocolate all over the rice cake. It's like a peanut butter cup with a crunch. ( and much healthier)
