It is Monday and I am happy about it. Wait, what?
While I am lucky enough to never really dread Mondays, I have had my fair share of the Sunday evening blues. But this week I get to have the Monday evening blues instead. If you are lucky like me, you are off of work today and will be enjoying a four-day work week. If not, well boo. Don’t feel too bad. This is the first time since beginning my adult working career that I have been off of work on Martin Luther King, Jr. Day, so I know the feeling.
I’ll be spending my day meal prepping, relaxing, and doing all things wedding planning. Oh, and The Bachelor watching. Obviously.
And since a large portion of my day will be spent in the kitchen whipping up food for the week, I thought it was about time that another one of these grocery haul and meal planning posts appeared. It is not like it has been over two months since the last one or anything. <– That is a lie. Regardless of my ability to keep up on these things, I hope you at least find some meal and snack inspiration along the way!

Weekly Meal Plan: January 18-22
Dinners for the week (with leftovers for lunches) include:
Plantain Chip Turkey and Veggie Meatballs (coming Thursday) + roasted brussels sprouts
Ginger Lime Sticky Chicky over cilantro lime cauliflower rice
My favorite Epic bar and veggie hash (coming to the blog soon)
Kalua Pig pork nachos
Roasted parsnips with canned salmon, parsley, and avocado
For breakfasts throughout the week I am planning on making my Taco Stuffed Baked Sweet Potatoes and Chocolate Banana Coconut Chia Pudding.

Yes! Plus it is also entertaining watching some of the crazies. I’m ready for the coming weeks, though, when it starts getting even better!
Oooo I am so jealous that you found canned coconut milk at Trader Joes! I can never buy that there! Is that new???
