We made it to Wednesday. Woot woot!
Like every other Wednesday here on CEVG, I am sharing a full day of my eats in honor of What I Ate Wednesday. This particular day of eats is from this past Sunday when my mom and I were in Des Moines going wedding dress shopping. I am happy to say that I ate delicious Whole 30-compliant food… and found the dress!
A Whole 30 What I Ate Wednesday: July 22, 2015
Since the continental breakfast at the hotel was pretty non-Whole 30ish, I ate what I packed for breakfast: a banana with almond butter and a turkey, almond, and cranberry Epic bar. I have heard amazing things about these bars and normally love sweet and savory, but I was not necessarily digging this bar. I guess I prefer Larabars or Kit’s Organic Fruit + Nuts bars. I might try some of the other flavors, but for now, I like to keep meat in its more “natural” form.
After our first bridal store stop, I was lucky to find a Chipotle that carried carnitas. I ordered a carnitas salad and topped it with the tomatillo salsa and plenty of guac. I loved every single bite of this salad, and it was just what I needed to fuel me through another dress appointment.
It only took us two stores to find the dress (back at the very first store), so I headed home to Omaha a bit sooner than I had originally planned. I snacked on an apple and lightly salted almonds throughout the drive. I also always make sure to have my Camelbak water bottle with me whenever I am traveling in an effort to stay hydrated.
Thank goodness for Instagram! I was apparently so hungry on Sunday night that I forgot to take a picture of my dinner on my DSLR. An iPhone picture will have to do! I made a chile lime chicken burger from Trader Joe’s (so good), baked sweet potato fries dipped in mustard, and kale sautéed in coconut oil. This is absolutely one of my favorite meals right now.
I finished the evening off with a small dish of plantain chips dipped in guacamole. These individual guacamole packs from Wholly Guacamole are amazing. I love that I never ever have to eat brown guacamole since every container is perfect for one serving <–totally not sponsored, I just love them!
I hope everyone has a wonderful Wednesday. Jeremy gets in town this afternoon and will be here until Sunday. To say I am excited would be an understatement.
