I thoroughly enjoyed sharing my first What I Ate Wednesday via my Instagram account a few weeks ago, and I think many of you did too! I so often share pictures of my meals from my DSLR and, as a result, most of the pictures that are only caught by my iPhone get lost in Instagram land. Plus, let’s be honest. Sometimes it is simply easier to grab my phone for a quick food picture than to lug around my two-pound camera.

hrmmmmm I think my favourite thing was my dinner tonight! I toasted then boiled quinoa, pan fried tofu in coconut oil, made some satay sauce from scratch, then put a layer of diced cucumber and tomato on top, and threw a handful of sprouts on it. SOOO tasty and filling!
Did you make those little taquitos? they look amazing! I can never get them to stick together.

Yes, I made the taquitos. I always heat them in the microwave for about 20 seconds first before I roll them in order to soften them up. That helps a lot!
Salmon (yay for eating it!), oatmeal…those tacos….love it all! I’m still dreaming of the yucca fried I had last night….SOOOOOOOOOOOOOOO good!
YUM!! That sounds awesome! I am about to start trying out a gluten-free diet for health reasons. What brand of gluten-free oats do you normally buy for oatmeal? Also, what other suggestions do you have for “must buys?” Thanks! 🙂

It does look like one I would enjoy though. Uhmmmm, I am pretty envious of those taquitos. I am a Mexican food lover til the end, and I want those! That tuna and split pea concoction does not look appetizing, but I’m going to guess that it probably tasted pretty dang good. It’s hard to make tuna taste bad… =)
