Is it really only Wednesday? Boo! Despite a busy week at work, it is taking forever for Friday to get here. It probably does not help that I am incredibly eager for the upcoming weekend. Jeremy will be here, and we have a fun fondue day with friends and Omaha Beer Week’s Extreme Beer Fest on our agenda. Basically, I am pumped!
But wishing the time to go more quickly will not work. So instead, I’ll just be sitting here talking and thinking about food. Pretty fitting for CEVG, huh?

What I Ate Wednesday: February 18, 2015
This might just be my new favorite breakfast. Sorry oatmeal and acai bowls, but I am loving this sandwich. On this particular day, I made a breakfast sandwich with a toasted whole wheat English muffin, Field Roast vegan cheese, sliced avocado, a sunny-side up egg, and sriracha. I ate a sweet apple on the side to balance out the slight spiciness of the sandwich. Everything about this breakfast was delish.
I also snacked on a couple of dried prunes throughout the morning. I used to think that prunes were gross, but now I love them. They almost taste like candy to me!
Lunch was my Healthier Dairy-Free Tuna Melt with a dill pickle. This might be my new favorite way to eat tuna.
I ate these zesty nacho kale chips a couple of hours later. I honestly don’t think I will ever get tired of kale chips. They are just so darn delicious!
My stomach was on overdrive on this particular day. I was hungry a short while later and snacked on these organic raspberries. I am seriously so impressed at how delicious berries have been in the middle of Winter. They are not so great on my credit card though…
Dinner was leftover Sundried Tomato Alfredo made with spaghetti squash. I’ll talk about this one in a future Friday Foodie Favorites post. You are definitely going to want to stick around for it because it was amazing!
Next up: snack time! Much like I enjoy mixed bowls of cereal, I also love mixed bowls of popcorn! In the mix this night was a sweet barbecue popcorn (amazing) and plain salted popcorn. I loved the combination of the two.
And because I’m addicted to berries right now, I paired my popcorn with a small bowl of sliced organic strawberries. These may have been even better than the raspberries!
I know what you may be thinking… no green smoothie? It is so very rare when that happens, but it was a busy on-the-go kind of day for me. Trust me, my green smoothie was the first thing that I woke up thinking about the next day.

No oatmeal or acai? Surprise Surprise! Your new favorite breakfast as of late looks pretty delicious though. I can see why you switched things up a little.
Pretty crazy, right? Don’t worry… I have still be eating those too! But this sandwich is so delicious that I am definitely hooked and will be for awhile.
Sweet BBQ popcorn?! I need to find this asap!

Both are SO good!! The BBQ popcorn is Angie’s… as far as I know it is a flavor that is exclusive to Hy-Vee right now. You better take a quick drive down the street 😉
I don’t know what it is, but there is just something about breakfast sandwiches that feels so extravagant to me. I hardly have time to make them in the morning, but whenever I do I’m always in love with them.
I SO agree!! I don’t normally have time during the week, so they are more often a weekend thing. But when I get the chance, I grab it!

I try to add sriracha to pretty much anything that is halfway socially acceptable 😉
That tuna melt looks delicious and I am most deff. trying the spaghetti squash! Yum!

We just had Spaghetti Squash Carbonara last week. I’m stilling getting used to converting from pasta to veggie pasta, but I’d still say it was quite the success. Sun-dried tomato alfredo may now be next on the list to try!
I definitely still love the real deal now and then, but there is just nothing better than some spaghetti squash pasta, in my opinion. I actually might be slightly obsessed 😉

Breakfast sandwiches are truly one of the best things. I don’t know why my body doesn’t crave them more often. It needs to get with the times 😉

I love prunes too lol. It’s so embarrassing, but I do. Not more than dates — but yes, prunes are fab. I think Pgh is having their beer fest this weekend but seeing as I don’t love dark beer I would probably be a waste of a ticket. Plus I’m going out of town, so. yeah. Have fun!!
I’m not a huge super dark beer fan either, but I am beginning to love a good IPA and sours have been my jam for awhile now. You’d be surprised what tastes you can acquire the more you try different ones. One of these days I WILL be a dark beer lover 😉
I love homemade egg mcmuffins! It’s been a while since I’ve had one but they’re so good.
They really are! It’s funny because as I was eating it, I thought to myself how much better it tasted than the egg mcmuffins I used to get from McDonald’s. Apparently my taste buds have changed for the better!
I have had good batches of fresh strawberries and blueberries recently but I still keep buying the frozen blueberries more than the fresh just because I eat so many the cost becomes ridiculous this time of year!
That is 100% understandable. Frozen is SO much cheaper. I normally stick with the frozen versions for my smoothies and oatmeal because you can’t even tell the difference 🙂

We have never done it before, but we are going to attempt to make our own! Wish us luck 😉 There used to be a Melting Pot restaurant here in Omaha, but it is no longer in business. I don’t think there are any fondue restaurants open here, though I sure wish there were!
