Happy Wednesday and What I Ate Wednesday! It is time for a short and sweet post of my recent eats! Forgive me, but I am spending every waking minute of my free time getting everything prepped and ready to go for my upcoming vacation. You do not mind though, do you? Let’s be honest, you mostly come here to look at/talk about the food, right? 😉
WIAW: June 11, 2014 (Recent Eats)
One of my favorite recent dinners made an appearance: Chickpea Tostadas.
Cereal! I told you last week that I was hooked on it, and the addiction is still going strong. I always go with a mixed bowl. One kind is simply not enough!
A delicious chickpea sandwich (more on this on Friday) on a toasted sesame seed bagel with Vegenaise and spinach + a pickle spear. If you haven’t noticed, I have a thing for pickles!
I love pretty much any and all fruits, but right now I am loving on peaches and nectarines. I am so glad that they are finally starting to come back in season.
Looks nasty, right? Well guess what… it tasted pretty nasty too 🙁 It is not that often that I make a recipe that I do not like, but this one was definitely not a keeper. I made this raw chili and barely made it through this bowl. The leftovers… yeah, those went down the garbage disposal. I hate wasting food, so you know this one really was not good. You win some, you lose some. I am just fortunate that most of the things I eat are winners.
Luckily, after a not-so-delicious dinner, I ate a wonderful lunch the next day. On the plate: quinoa that I boiled with water and a little bit of Bragg’s Liquid Aminos, steamed brussel sprouts, and a small red roasted potato topped with Melt buttery spread <– seriously, so good!
And finally, my favorite recent eat of the week:
I met up with Erin and Jordan last night at Kitchen Table, one of my favorite restaurants in Omaha. We all ordered their three bean burger (vegan style for me!) and had the most delicious roasted potatoes on the side. Kitchen Table was actually the restaurant where I first met Erin last year and last night was the first time that I had met Jordan. I first realized that Jordan lived in Omaha after she won my Zevia giveaway, so I was super excited to finally hang out with her. We all had a fabulous time together! Having an awesome meal did not hurt either 😉
