April already? Is this real life? When they say that time goes by more quickly as you age, they are right. Time has been flying. Noticing that now at the age of 26 scares me a little bit because it makes me think that by the time I am 50, one year will seem like one month. Let’s hope it is not that bad 😉
Let’s stop talking about “bad” things, though, and focus on the good…like food! Food is always good in my book.
What I Ate Wednesday Friday: April 2, 2014
Pre-Breakfast
I woke up extra early to get going on the day so I snacked on a rice cake topped with pumpkin butter until I was ready for a full breakfast.
Breakfast
Holy green! When I first arrived to work, I drank my daily smoothie. This smoothie was extra green, which I loved. In the mix: unsweetened coconut milk, french vanilla Vega One, frozen banana, frozen cranberries, frozen strawberries, and lots of spinach.
More green with this one! The second part of my breakfast included two pieces of toasted Ezekiel bread topped with mashed avocado and sea salt.
On the side I ate scrambled eggwhites cooked with a bit of hot sauce and black pepper.
Mid-Morning Snack
No banana again. Crazy, right? Instead, I ate fresh raspberries and black grapes.
Lunch
I think I see a theme going on here. Lots of green, eh? The first part of my lunch was two platefuls of salad topped with Whole Foods lemon tahini dressing. I love that stuff.
I also ate a veggie wrap. In the sprouted Ezekiel tortilla was hummus, nutritional yeast, spinach, sauerkraut, black olives, onions, cucumbers, and red peppers…basically everything that I had in my fridge. It ended up being a fantastic combination.
Afternoon Snacks
Celery and peanut butter again. And yes, this is the same picture I have posted like the last three weeks. What can I say, I seem to forget about picture taking once the afternoon hits.
I got out of work early at 3 and ate this tasty Larabar on my way to Target and the grocery store.
Lot of snacks were going on this day. I ate an apple to tide me over while making dinner.
Dinner
Dinner was a barbecue lentil sandwich on toasted Ezekiel bread topped with sriracha coleslaw and served alongside a pickle. This was deeelicious. I promise, I will post the recipe soon!
Evening Snack
Finally, I finished off the day by snacking on a whole ‘lotta this popcorn. It is vegan and cheesy and oh-so-delicious! I am loving all of these new popcorn flavors that I have been trying lately.

I’ve never seen the cheddar skinny pop but I neeeeeeeeeds it. It’s so much better than greasy theater popcorn, so good thing I have a super jumbo purse to smuggle some of it into the movie theater 😉
It is really good! You definitely need to find it. And aren’t big purses the best? I lose things in mine all the time, but they always come through for the win in situtations like that!
Well…now I’m craving a veggie wrap! It look so yummy!

You did an awesome job getting veggies in yesterday. Your smoothie color is pretty awesome, and looks delicious. Can you believe the grocery store was out of spinach when we went grocery shopping this past week? Fingers crossed they have restocked for Friday!
I have had that happen to me, too, and I was seriously so sad/mad! How do they not have spinach? So wrong, right? 🙁 I hope you find some on Friday!
I used to love celery and peanut butter as a snack. I should really bring that back into my day.
Yes, you REALLY should! You really cannot beat an excuse to eat nut butter. Let’s be honest…that is about the only reason why I actually eat celery 😉
Things in this post I need to buy right now: 1) Pumpkin butter – why do I only eat it in the fall?? I love that stuff. 2) Ezekiel bread – I read about it so much but never have gotten it and finally 3) White Cheddar skinny pop – I don’t even know why I’ve never had it!
YES to all of these!! Pumpkin is definitely eaten year round for me…I love it 😉 And be careful with the popcorn…I could totally eat a whole bag in one sitting 😉

Looks like a great day of eats! I was going to have avocado on toast last night but my avocados are not yet ripe :(. Do you eat scrambled egg whites cold? I have taken them to work with me a few times and kind of like then cold.
Ahh, what a bummer! That is always so frustrating 🙁 I do not normally eat my eggwhites cold, but you have me intrigued now. I’ll have to try that out.
You do such a great job of eating a bunch of mini meals – I love it!!

I friggin love sauerkraut–totally putting that in my wrap next time! Do you keep those wraps in the freezer? I never know the best way to store them…. PS the engine 2 sprouted wraps are awesome, too!
