How to Roast Whole Carrots

A step-by-step pictorial on How to Roast Whole Carrots.  Serve them alongside your favorite dish or in place of french fries, and eat them as a quick vegan, gluten-free snack!

Roasted Carrots 10I am honestly beyond surprised that it took me nearly 27 years of my life to start roasting whole carrots.  I am mostly surprised about this for two reasons: 1) Carrots are one of my favorite vegetables (obsessed would be an understatement); and 2) I roast pretty much any and every vegetable that I can get my hands on.

It turns out roasting whole carrots is incredibly easy to do.  As a result, I imagine they are definitely going to be making their way into my oven on an almost weekly basis.  As one of the biggest carrot lovers around, I want to see them in your ovens too!  Today I am going to share with you exactly how easy it is to roast whole carrots.  I promise, there is very minimal chopping required!  Let’s be honest, the chopping is the worst part of roasting vegetables.

How to Roast Whole Carrots

Roasted CarrotsStart by preheating your oven to 400 degrees F.  Gather six whole carrots (more or less is fine, but this was the number in my bag).  Try to choose carrots that are fairly equal in size so that they will roast evenly.

Roasted Carrots 2Grab your vegetable peeler and get to work!

Roasted Carrots 3Peel all of the carrots and discard the peelings, or use them in a salad.

Roasted Carrots 4Cut the ends off of the carrots.

Roasted Carrots 5Cut the whole carrots in half, length-wise.

Roasted Carrots 6That is all the chopping you will do.  That’s not so bad, right?

Roasted Carrots 7Place the carrots flat-side down onto a baking sheet that has been sprayed with cooking spray.  You can also skip the oil and use a silicone baking sheet.

Roasted Carrots 8Spray the carrots with cooking spray.  I used olive oil cooking spray, but coconut oil spray would be great too!  Sprinkle with desired seasonings.  I used 1/2 tsp fine sea salt, 1/4 tsp black pepper, 1/2 tsp dried thyme, and 1/4 tsp dried rosemary.

Roasted Carrots 9Once seasoned, put into the oven and roast for approximately 25 to 30 minutes.  Watch them carefully near the end to ensure they do not burn.  The thin ends may get slightly crispy, but you can slice this part off if it bothers you.

Roasted Carrots 11Since my roasted whole carrot obsession developed, I have eaten them as a side dish, in place of french fries, and for snacks.  Essentially, these are proof that carrots are about so much more than salads and relish trays.  But I can almost guarantee that if you put roasted carrots in my salad, I would certainly be on board with that!

    I love roasting vegetables! I always buy the baby carrots and roast those... because I'm lazy :) maybe I should start buying the regular carrots since they are cheaper.

      Whole carrots are definitely super cheap.. even the organic ones! I am guilty of buying baby carrots though, too. They are just SO simple!!

    I loveeeee carrots in any way shape or form (seriously, we've had to put a limit on how many carrots I can eat in a day because I've turned orange too many times hahaha) and lately I have been loving roasted carrots now that the weather is getting cooler!       They're already gone ;) haha... I'm sticking with sweet potatoes for the burritos because I am just as obsessed with them as I am with carrots!

    This is a great idea! The hubby and I have done grilled carrots, too, as a replacement for french fries and they are delicious! I never would have thought to do have them as a replacement for fries, but it was all my hubby's idea! We haven't cooked them this way in a long time, we'll need to try it out using your recipe next time!

    SOOO simple! However, I NEVER peel them. I don't like peeling my root veggies, even beets! Haha! But these carrots with herbs like rosemary and thyme....dipped in ketchup ;) Goodness! Sweet and savory!

      Dipping them in ketchup is the BEST!!! I sometimes don't peel my carrots when I eat them raw, but hadn't thought to leave the peel on for roasting. I'll have to try that next time and save myself some extra steps!

    I love roasted carrots and have been roasting them up with parsnips and subbing them for fries lately! I usually buy the whole carrots to roast but chop them up before roasting. I never thought to just throw them in the oven whole - I will definitely have to give this a try. Thanks for sharing!

    I have teasingly said many times that I must have been a rabbit in my past life because I eat so many carrots on a regular basis. I swear MOST of my days' eats include carrots. And I prefer them cooked or roasted in some way or another vs. raw. But I have never roasted them whole either! Nifty!
