Tempeh “Bacon” and Egg Breakfast Sandwich

A five-ingredient hearty and delicious breakfast sandwich perfect for vegetarians and bacon-lovers alike!

tempeh breakfast 2Just because I am a vegetarian does not mean that I do not deserve to eat delicious breakfast sandwiches made with crispy bacon…

…uh, tempeh “bacon,” that is!

tempeh breakfast 3Sure, it may not exactly look like bacon.  And it might not be quite as crispy as bacon.  But I promise that it is not just healthier, but also tastier than bacon <– I have a feeling that I am going to have a lot easier time convincing my fellow veg-lovers of this than my meat-loving friends!

tempeh breakfast 5Even if you are not completely sold on the tempeh “bacon” part yet, you really cannot say no to perfectly toasted bread, “cheesy” hummus, and a fried egg, right?  The tempeh is simply the required protein on the sandwich icing on the cake.

tempeh breakfast 7Tempeh “Bacon” and Egg Breakfast Sandwich

Serves 4

Ingredients

olive oil cooking spray
8 oz package tempeh
1/2 cup Bragg’s or coconut liquid aminos (low-sodium soy sauce will also work)
8 pieces sprouted or whole wheat bread (I used Ezekiel brand)
1/2 cup hummus (I used a roasted red pepper flavor)
4 large eggs (cage-free and organic, if possible)

Directions

1. Preheat oven to 400 degrees F.  Spray a foil-lined baking sheet with cooking spray.

2. Slice tempeh into thin strips.

3. Place liquid aminos in a shallow bowl.  Dip tempeh into aminos and coat both sides.  Place onto the baking sheet.

4. Bake the tempeh for approximately 20 minutes, flipping once halfway through.

5. When the tempeh is in its last 5 minutes of cooking, toast the bread and cook the eggs to your liking.  I prepared mine as sunny-side up eggs.

6. Spread one slice of toast with hummus.  Top this piece of bread with one cooked egg and eight slices of tempeh “bacon.”  Top the sandwich with the second slice of toast.  Repeat for the other three sandwiches.

tempeh breakfast 4Sometimes I wonder why I look forward to breakfast so much on the weekends.  Then I make something like this and I remember why in an instant.

tempeh breakfast 8You know that I could not resist a little bit of yolkage, right?  But if sunny-side up eggs are not your thing, this sandwich would be perfect with scrambled eggs or a tofu scramble!

tempeh breakfastBreakfast does not have to be boring.  At the same time, it does not have to be unhealthy either.  This breakfast sandwich is certainly far from boring and packs a healthy punch.  It is simple to make, yet has complex flavors, and it is heavy on the protein, healthy fats, and whole grains.  Next time I might add on some fresh spinach for a complete nutrient-packed breakfast!

    I’m not a fan of runny eggs, but I can dig the whole tempeh substitution. Sadly though, I haven’t been eating to many stellar breakfast meals these past few weeks. They’ve been consisting of a pumpkin spice english muffin with a little cookie butter. It’s good, and somehow keeping me full for hours. I’m thinking it has to do with pregnancy.

    I’ve been slacking off on weekend breakfasts lately. And by slacking off, I mean sleeping right through them :-x. This sandwich looks worth getting up for!

      Haha! Hey, it happens! Honestly, sometimes breakfast is the ONLY thing that gets me out of bed in the morning. What can I say, I like my food 😉

    Some people don’t like tempeh, but I love it! I’m a huge breakfast person so I will definitely try this somewhere down the road 🙂

      I LOVE tempeh, too! I think it is probably my favorite meat substitute. I’d probably eat it every day if I could 😉

    Oh I LOVE runny eggs! I don’t eat them while I’m pregnant though…. now I’m wishing I would have eaten runny eggs all summer haha. The hummus idea for cheese is pretty smart too!

    I’ve never tried tempeh. What is it? I’m not a fan of bacon. I don’t eat pork. I’ve tried turkey bacon but don’t love that either. I’ve been looking for a substitute for years.

      Tempeh is essentially fermented soy. It is FABULOUS when you season is right and then bake or fry it!

    Every time I attempt tempeh it tastes bitter. Blech! It looks like I bought the same brand as yours. Any ideas on what is going on?

      Tempeh on its own definitely tastes bitter… I find that as long as I marinade it well then it is delicious! It might also help that I actually like bitter foods (huge sauerkraut fan here!).

      Tempeh is delicious! It just has to be seasoned right. You should give it a try sometime. You might try it at a restaurant first if you find it a little intimidating.

    Okay, so I looked up how tempeh is made (deep fried fermented soy beans – or so google says) and I think this is up my alley. Very creative with the red pepper hummus.

      You can’t beat soy beans, can you? Tempeh is actually quite healthy too since fermented soy is the best form of soy to eat. I hope you give it a try 🙂
