Can you believe that October is almost over?  I have had a great last weekend of October full of Halloween fun (more on that on Friday) and tons of delicious eats.  Since Wednesday is all about the food, let’s get down to business and check out some of my recent eats!

What I Ate Wednesday: October 29, 2014 (Recent Eats)

recent eatsIf you haven’t tried my Buffalo Cauliflower “Chicken” Sandwich yet, you need to!  It is a favorite of mine and I made it for the third time last week.  I served it on a whole wheat bun with lettuce, onions, tomatoes, and hummus.  I ate California mix vegetables on the side.

recent eat 6I am obsessed with sunflower seed butter right now.  This is my favorite thing to stir into my hot oats.

recent eats 3One of my favorite easy lunches to prep the night before a work day is a vegan apple and sage Field Roast sausage and a small baked potato.  I normally dip the sausage in mustard or barbecue sauce.

recent eats 2I have been loving a lot of things lately, but one thing that I have not loved is this smoothie protein powder.  I am a huge fan of the vanilla and chocolate flavors, but the tropical flavor was just too much for me.  It was too sweet and too “tropical” tasting.  I suppose I should have expected that?  If any of my friends are interested in trying this for themselves (our taste buds may differ), let me know!

recent eats 4Dinner one night last week was a leftover Vegetarian Runza dipped in barbecue sauce with a side of peas.  This is totally my kind of dinner.

recent eats 5It had been over a year since I had eaten a cauliflower pizza crust pizza.  I changed that last week and made a very veggie version of it.  I also added on some beans for extra protein.  It was so good!

recent eats 8It has been far too long since I have shared a new popcorn flavor find with you, hasn’t it?  I am a major fan of salt and vinegar almonds and potato chips.  I figured this popcorn was right up my alley.  This popcorn is really good.  The seasoning is perfect and the vinegar flavor is not too overpowering.  I highly recommend checking out your local Target for this one.

recent eats 7This was the perfect Fall afternoon lunch on Friday.  Check back tomorrow for my details… because vegetarians like chicken noodle soup too! 😉

recent eats 9Are there any other black grape lovers out there?  It had been awhile since I had seen these at Trader Joe’s, so when they were there on Friday I knew I had to pick them up for snacks throughout the week.  I love them!  I generally eat them in the evenings as a sweet compliment to salty popcorn.

recent eats 10This past Saturday, I went on a girls date to Whole Foods with Erin and Joanna.  We love hitting up the salad bar and hot bar every now and then.  I loaded up on the veggies and added in a little bit of fruit.  You need to try their avocado dressing if you haven’t done so yet.  It is my favorite!

recent eatsA quick and simple salad for dinner with lettuce, onions, red peppers, tomatoes, and chia ranch dressing that I topped off with a Hilary’s Eat Well Black Rice burger.  I love ’em!

recent eats 4I know this may not be the prettiest dish ever, but it is so delicious!  I made Robyn’s Lemony Ginger Red Lentils on Sunday and served them over cauliflower “rice.”  And yes, that is green cauliflower!

recent eats 3Pitted prunes are one of my current favorite snacking addictions.  I especially love the Whole Foods 365 brand because some other brands tend to be a little “too dry.”  I keep these in my refrigerator and probably eat about three per day when I have a random sweet craving.

recent eats 2It’s not a Fall WIAW post without a little pumpkin.  I made my Pumpkin Chocolate Chip Pancakes on Sunday (for the third or fourth time?) and have eaten the leftovers for breakfast a couple of times this week at work.  I just pop them in the toaster and they are perfectly warm and not soggy.  The toaster is a miracle worker!

    Ah no wonder why I didn’t recognize the Buffalo Cauliflower “Chicken” Sandwich you mentioned. I was on vacation during that time. Thanks for re-sharing! I unfortunately don’t have any chickpea flour. Would white whole wheat flour work in replace?

      You definitely need to try it! I haven’t made it with any other flours. I personally love the taste of chickpea flour, so I don’t know if it would taste as good? However, if you are heavy on the buffalo sauce then you may not even know the difference! Let me know if you try it 🙂

    I am loving these healthy eating ideas!! I am definitely going to be trying those pumpkin chocolate chip pancakes – what a treat! And the cauliflower pizza crust looks delicious, too. 🙂

    Sunflower seed butter is a beautiful thing!
    I’ve been eating grapes like crazy! All kinds have been just so good in the grocery! Grape season?
    Toaster(ing) pancakes is an awesome way to reheat!

      It took me a little while to get used to the taste of sunflower seed butter, but now I am officially HOOKED!

    Oh I’m excited to see how you make your chicken noodle soup! And that popcorn needs to be in my pantry ASAP!

      The popcorn is AMAZING! I was afraid the flavor would be too strong, but it is just right. I mix it with vegan white cheddar popcorn (weird?) and it is delicious!

    Love finding other vegetarian WIAW posts! The cauliflower chicken sandwich looks sooo good! I gotta try sun butter because I’m already obsessed with sunflower seeds…. or maybe that means I shouldn’t try it 😉

      Haha! It’s a slippery slope, isn’t it? It is hard not to be obsessed with nut and seed butters. They are just SO good!

    OH, YUM! I’m not vegan, or vegetarian but I’m excited to try the buffalo cauliflower. I’m trying to eat more veggies. I’ll try it with no bun! thanks!

    Everything looks delicious! I haven’t had sunflower butter in SO long…it’s really expensive and I don’t usually splurge for it. I need to correct that. Happy WIAW!

      I splurge on food, but one food that I REALLY splurge on is nut/seed butter. I can’t resist!

    I haven’t tried sunflower seed butter before but it’s on my to-try list! I keep seeing it everywhere and I can only imagine how delicious it is 🙂

      I really like it! I had to give it a few tries though because it was definitely an acquired taste for me. You definitely need to give it a shot!

    So many good-looking things here! I’m going to have to try that sea salt and vinegar popcorn. Sea salt & vinegar is my favorite flavor of potato chip – hooray for a healthy alternative!

    I am laughing because I recognized the big blue Whole Foods food because I took it home once (I don’t know if you remember that) and I eat from it all the time lol. I recently tried the vanilla Vega and like it!

    Avocado dressing! Sounds amazing but I am much too lazy to take out my vitamix blender and make it and then clean it. I just hate cleaning! Your meals look so vibrant.

    OMG wait. The salt and vinegar popcorn sounds like the best thing ever!!! I legit may have to go to Target tonight and get some. I’ll do my best not to walk out with a new dress, a sports bra, paper towels, and unnecessary blog props.

      HAHA!! We are totally the same person. I avoid Target whenever possible because clearanced clothing and blog props always end up in my cart… oops 😉 But in all seriousness, the popcorn is legit amazing. Go get some!

    I love cauliflower pizza crust, but never make it often enough because it’s such a hassle! Next time I should just make a bunch and freeze them 🙂

      I agree.. it is definitely a pain to make. I riced my cauliflower over the weekend so it was super simple when I made it. I will definitely be doing that from now on. Have your frozen the crusts before? That is an awesome idea too!

    I am obsessed with all things cauliflower, so I’m definitely going to try that burger recipe out. It looks really good. Vega I feel like is either a hit or a miss. I had the chai flavor once, but it just wasn’t for me.

      I definitely think you are right about the Vega. I am all about the vanilla and chocolate, but I really don’t think the fruitier flavors are for me…
