Happy Friday! And Friday the 13th, at that! I am not much of a superstitious person, and I actually happen to like the number 13. So I say bring on the day!
I am also incredibly eager to make it through this day because once 5:00 hits, I am home free and will begin my 9-day vacation away from work. My boyfriend will be arriving late tonight and then we are off to Colorado bright and early on Saturday morning. I have zero plans of bringing my laptop with me, so do not expect any blogging from me other than a guest post that I will be doing over at Kim’s blog. I will, however, be taking my camera along with, so expect a few recaps of the trip.
How about one last post before I go? It is that time again- time for me to share a round-up of some of my favorites from around the blogosphere.
Friday Foodie Favorites: June 13, 2014
Speaking of Kim, this recipe just so happens to be one of hers! You all know how crazy I am about my chickpea salads! So obviously when I saw a new one on Kim’s blog, I knew I had to try it! This Avocado Chickpea Salad combines two of my most favorite foods: avocado AND chickpeas! It is definitely a winning combination. I followed the recipe exactly, but used raw red bell peppers in places of the roasted red peppers. I thought the substitution was just dandy! I ate my salad on rice cakes, but I love Kim’s idea for eating it in a wrap. Next time I will definitely be trying that out!
I obviously don’t have a thing for chickpeas. Okay, clearly that is a lie. I love me some chickpeas and I incorporate them into my meals any chance that I get! Richa’s Spicy Blackened Chickpea Scramble Sandwich was calling my name from the moment I saw it. I mean what is not to love: chickpeas, peppers, onions, and delicious spices- this sandwich has it all. And don’t be intimidated by the title. This is not overly spicy and I can almost guarantee that even those of you who do not like spicy food will enjoy this one. I ate my first serving on a toasted sesame seed bagel (totally obsessed with these right now) and the other two servings on toasted Ezekiel bread. Both were absolutely fantastic. I highly recommend the addition of spinach/lettuce and Vegenaise! You can thank me later 🙂
This past Sunday I made Alissa’s Mulligatawny Soup. Now if you are anything like me you just said, “what kind of soup?” I had never heard of mulligatawny soup until I saw Alissa’s post, but once I read the ingredients I knew that it was definitely my kind of soup. I had cooked with yellow split peas one other time and love split pea soup made with green split peas, so I was excited to try this out. Unfortunately, 30 seconds before I was about to add the red chili paste to the pot I read the ingredient list and saw that it contained fish sauce. Clearly, I should have read the ingredients at the store. That is what you get for being in a hurry! So it is safe to say that I did not add the red chili paste. I did, however, add some green curry paste that I had leftover in the fridge. It definitely made it spicier than the originally recipe probably is, but I enjoyed it. I loved the added veggies thrown in there too!
This final favorite is actually something that I have posted about several times in the past, but I am going to keep on talking about it until y’all make it because it is that good! This is my current favorite snack and was inspired by something that The Fitnessista posted about a few months back. Essentially, you can make this by chopping and microwaving an apple for 1 1/2 to 2 minutes (stirring once halfway through) and topping the apple with cinnamon, almond butter, and dairy-free chocolate chunks. The best part about this is that the hot apples make the almond butter and chocolate super melted and extra delicious. Seriously. Go make this.
