Chipotle Chickpea Salad

chipotle chickpea salad 3Another chickpea salad?  Yes, this is happening.  I hope you are not too upset with me.  But you see, I have an obsession with chickpeas and I especially love them in “salad” form.  I admit it.  I’m not ashamed of it.  And to be honest, I am quite certain that these chickpea salads will continue to come your way.  I hope you are good with that.  And if not, well at least try to pretend that you are for my sake.  Cool?  Good!

chipotle chickpea salad 6The chipotle chickpea salad contains protein, veggies, and just the right amount of spice.  This is a winner of a salad for lunch or dinner…and I suppose breakfast if you want to get really crazy.

chipotle chickpea salad 10Chipotle Chickpea Salad (Vegan)
Serves 2-3

Ingredients

1 15 oz can chickpeas, drained and rinsed
1 stalk celery, finely diced
1/4 cup red bell pepper, finely diced
2 tsp dried onion flakes
3 TB vegan mayo
1 to 2 tsp sriracha sauce (start with 1 and add more to your liking- I used 1 1/2 tsp)

Directions

1. Using a fork, mash chickpeas in a medium bowl until mostly pureed with some small chickpea pieces remaining.

2. Stir in remaining ingredients.

3. Refrigerate for at least one to two hours, or until chilled.

4. Serve as a sandwich, in a wrap, on rice cakes, or with crackers.

chipotle chickpea salad 11I ate mine in hearts of Romaine lettuce leaves for dinner, and as a sandwich on toasted Ezekiel bread for lunch.

chipotle chickpea salad 5Some like it spicy.  Some like it not-so-spicy.  The beauty of this salad is that you can make it your own.  Spicy for this girl!  Sriracha sauce is definitely my friend.  Hopefully I don’t get too crazy and start adding it to everything now 😉

    YUMMMMM! I love the variation of this salad compared to the last one you shared 🙂 And I’m alll about hot sauce so this is perfect!

    I can’t recall if you already did this but I am totally feeling a chickpea salad like this using barbeque flavors, sauces, seasonings etc.

    I’ve been on a chickpea kick like no other lately! For snacking, salads .. you name it! I’ve mostly just been roasting them but I need to try this – love the spice! We adore sriracha sauce in our house!

      Sriracha is where it’s at!! And SO are roasted chickpeas. I LOVE snacking on those.

    I have never actually tried siracha, crazy I know. I love cold chick peas in salads out but don’t make them at home often. I might need to try one I your chick pea salads soon.

      Yes! I especially love this with Vegenaise. That stuff is like crack to me, though. I don’t even like real mayo, but I LOVE that!

    I made this for lunch today and it’s amazing! I am not vegan, so I did light mayo and a little fat free feta on top, but serious yum. I always struggle with too much carb/not enough veggies and protein – this is perfect!

    I’d like to know if you have ever substituted chopped onion for the onion flakes? I was thinking of doing it? Maybe 1/4 to 1/2 cup? Also, couldn’t find srichacha sauce so I bought srichacha salsa.. hoping this works. Maybe I could cut out the onion all together since it’s in salsa?

      Raw onions would definitely be a fine swap! The salsa that you purchased sounds delicious. You could definitely omit the onions if you are using that. That is the beauty of chickpea salads… you can totally experiment and change things up and they STILL work!
