It is official. I am not the greatest at remembering to take pictures of my food for WIAW posts. And when I do remember, I hardly ever take my WIAW pictures ON Wednesday. That is so wrong, right? Last week I featured my Thursday eats and this week I am featuring my Tuesday eats. I seem to feature pretty much every single day other than Wednesday. One of these days, though, I am going to get it right. And on that day, we should all celebrate and throw a party!
Now while this is not quite as exciting as an actual party, I still think that we should celebrate all of the delicious food that I ate on Wednesday Tuesday.
What I Ate Wednesday Tuesday
Breakfast
The first part of my breakfast was a green smoothie. This smoothie contained unsweetened vanilla almond milk, French Vanilla Vega One, one frozen banana, frozen zucchini slices, frozen strawberries, and fresh spinach. Will this ever get old? No, probably not!
Breakfast part 2 was Robyn’s pumpkin baked oatmeal (with cacao powder added in) topped with strawberry jam that I melted in the microwave before eating it.
Mid-Morning Snack
Fresh fruit for the win. I cannot even begin to tell you how excited I am that cantaloupe is finally tasting good. I am so glad to have it back in my life!
Lunch
Lunch was leftover Minestrone soup that I dug out of my freezer. This was my last batch of leftover soup. It looks like it is time to get my freezer stocked back up again!
And, of course, my current favorite soup accompaniment: rice cakes!
Afternoon Snackage
The usual: celery and peanut butter. Can’t stop, won’t stop.
Dinner
Dinner was something that I have been majorly obsessed with the past few months: popped quinoa and cheesy eggs (made with vegan Daiya cheese) that I topped with sriracha and sea salt. SO good. Oh, and what you do not see is that I accidentally dumped about a fourth of this on my living room carpet while attempting to eat it. Picking up quinoa off of carpeting is NOT fun.
Evening Snacks
Yes, this is weird. But what can I say…I love peas! Leftover peas and baby carrots with hummus. My method for eating this is to eat all of the carrots first and then mix together the peas and leftover hummus. Don’t knock it until you try it.
More fruit. Like I said earlier…I am obsessed. I will take any and all excuses to eat cantaloupe right now. The fresh berries weren’t too shabby either 😉
And finally, I capped off the night with a baked (microwaved) sweet potato topped with Justin’s vanilla almond butter. I do not foresee ever tiring of this combination anytime soon.
