Happy Wednesday! We are almost more than halfway through the week, and it looks like we are also almost halfway through the month of March. On the one hand this makes me sad, but on the other it means we are less than two weeks away from my birthday- and that is a great thing!
So I have been slacking lately. For some reason I have had a really difficult time remembering to take pictures of my daily eats. As a result, I am going to combine my eats from two days this past week in order to create a full day of food. Just pretend I ate everything on the same day, okay? 😉
What I Ate Not Wednesday: March 12, 2014
Breakfast
No surprise here. Breakfast #1 is always a green smoothie. In the mix this time was unsweetened vanilla coconut almond milk, chocolate Vega One, frozen banana, frozen cranberries, frozen blueberries, and lots of spinach.
Breakfast #2 was pumpkin cocoa overnight oats with peanut butter stirred in and topped with puffed kamut cereal and fresh blueberries. I am so glad that blueberries are finally starting to come back into season. My credit card is happy about that, too!
Mid-Morning Snack

Lunch
Lunch was leftovers from the night before. I had baked tofu (marinated in Bragg’s Liquid Aminos) that I dipped in lots of barbecue sauce. One the side were mixed vegetables. I realize that this looks totally unappealing, but I promise that it was delicious!
Afternoon Snacks
In the afternoon I ate my current favorite snack: celery with crunchy natural peanut butter. I cannot get enough of the crunchy PB right now!
I also snacked on an apple. Pink Lady for the win!
Dinner
It was basically a “throw whatever is left in the fridge into a pan” kind of night. It actually turned out really delicious and I plan to share a bit more about it in a future post. It is basically a Mexican potato “hash” of sorts.
Evening Snacks
I am still really loving on blueberries and grapes. This snack is pretty much on repeat.
And finally…my other favorite snack: a baked sweet potato topped with Justin’s vanilla almond buttah…SO good!

I don’t even like meat that much anyway, and I’m a big fan of tofu. Maybe I should take the plunge?

Yeah, you really don’t need meat when you have delicious tofu, tempeh, seitan, etc., etc., etc.!
Your eats look great – especially that Mexican hash! I can’t wait to see a recipe! Also, I’m totally with you on blueberries coming back into season! Now I just have to wait another month for my farmers market to open back up and I will be one happy girl!
I know!!! Mine doesn’t open up for about another month and a half. I am excited for it!

It was fantastic!!! Baked tofu is one of my favorite things. It cracks me up that I actually crave it because I used to think it was “scary!” 😉

It’s been awhile since I have seen a sweet Potatoe with nut butter…I want one!!! All of these eats look fabulous even if they aren’t all from one day. I actually love the throw everything in a pan creations!

Loving all these eats! I just went vegetarian so I’m always looking for ideas! I made a hash recently very similar to yours. I threw in sweet potato, black beans, tomato, avocado, spinach, onion, and cottage cheese!

I love adding them in because it provides just a little bit of tartness. Plus, I have a TON of them in my freezer from when they were on sale after Christmas, haha.
I can’t believe that we are almost half way through the month already. Also, I love those kind of meals where you just throw what ever you have in the fridge in a pan.

Your eats always look so good. I like the idea of baked tofu with BBQ sauce. I have some tempeh in the fridge that I have been waiting to make and now I want to make it to serve with BBQ sauce!

Mexican potato hash? Yes, please. It really looks amazing and way better than some of my everything-but-the-kitchen-sink dishes. Maybe it’s wrong but as I’ve never had any authentic Mexican dishes I just call anything I liberally spice with cayenne pepper, smoked paprika and chili flakes ‘sort of Mexican’ 😉 .

I’m trying to make more green smoothies for myself..sometimes I just can’t get past the spinach taste in the smoothie. Need to train myself to like them more! LOL

Have you tried frozen grapes & blueberries? It is like eating candy! I love them frozen. I never heard of topping a sweet potato with nut butter. That’s one I haven’t heard of!
