I have a lot of “go-tos” and obsessions when it comes to food. I love sweet potatoes, carrots, nut butters, lentils, bananas, etc., etc., etc. My favorite foods have all made appearances in my breakfasts, lunches, dinners, and snacks at one point or another. But my all-time favorite food when it comes to snacks is probably pretty obvious by now. I love popcorn- like in an “I can’t get enough of it” kind of way. I enjoy movie theater popcorn, bar popcorn (it’s seriously the best, right?), caramel corn, kettle corn, packaged popcorn (Angie’s is the best!), and pretty much any flavor and form of popped kernels.
Several nights each week I choose popcorn as my late-night snack. I have several Popcorn Tins from Vics Corn Popper. I make my popcorn in an air popper. If you do not have an air popper, you should seriously consider getting one. They are relatively inexpensive and are a fantastic investment. Popcorn is a great night-time snack because it is lower in calories and high in antioxidants. Double-win!
When preparing my popcorn, I pop up a big bowl and then portion it into individual servings. I then spray the popcorn with either olive oil spray or coconut oil spray. My “go to” toppings for popcorn are normally sea salt, nutritional yeast, onion powder, dried dill, and/or curry powder. It may sound like a strange combination, but I love it!
Lately, however, I have also recently fallen in love with this:
I mentioned multiple times that I have a slight 😉 obsession with all things barbecue- yes, even as a mostly plant-based eater! I bought this barbecue seasoning for a recipe, but have been loving it as a popcorn topper.
I combine the barbecue seasoning with sea salt, onion or garlic powder, and lots of nutritional yeast to make an insanely delicious and addicting popcorn creation. Trust me, you are definitely going to want to try this out.
