It has been awhile since I have shared one of my What I Ate Wednesday posts with you!  With my two-week long blogcation, you have missed out on a lot of great Wednesday eats…and yes, a lot of bananas! 😉  But do not fear, my regularly scheduled What I Ate Wednesday Tuesday posts are back!

What I Ate Wednesday: August 28, 2013


WIAW 82813 3Part 1: Breakfast began bright and early at 5:00 a.m.  I ate half of a banana on the drive to spin class and downed my Camelbak bottle of water during the workout.  I finished up the banana when I got home.  How weird is it to see the banana so early on in the day? 😉

WIAW 82813 5Part 2 of my breakfast was eaten at work.  It consisted of a baked sweet potato topped with PB2 peanut butter…

WIAW 82813 2…and followed up with a white peach and a vanilla vegan coconut milk yogurt.  This is by far my favorite vegan yogurt variety out there.  It is tasty!


WIAW 82813 4Lunch consisted of leftovers from Monday night’s dinner: Sweet and Spicy Tofu w/ Veggies over brown rice (more on this later in a future Friday Favorites post!)


WIAW 82813My afternoon snack was a cherry + vanilla organic Skout trailbar.  I won a giveaway on Giselle’s blog and was so exited to try these!  The ingredient lists are great and I love the unique flavors.  These definitely resemble Larabars, which I also love.


vegetable barley stew 3On Sunday I cooked up a big batch of my Vegetable, Lentil, and Barley Stew.  I have been eating it for several meals this week and have been serving it over cauliflower “rice.”  It is darn good!


These are all going to be recycled pictures, but you get the gist.  What can I say, I am a creature of habit!

    That yoghurt sounds so yummy!! They are only really bringing coconut flavoured stuff our more here now but we are still way behind!

    I need to try boom chicka pop! My microwave is acting wonky and not cooking popcorn the way I want it to.

    I got that popcorn because I had heard good things about it.... But Was kind of disappointed. I mean it was $2.50.....and all it was was popcorn. Lol I thought it was something special. I could prob get a box of natural no butter added popcorn for cheaper.

      I really like it simply because it is just popcorn with a hint of sea salt. I think the level of salt is perfect for my taste buds. Plus, it avoids the chemicals that are found in microwave popcorn :/.

    Ah! So glad to hear you like the Skout bars. I actually just received some in the mail today that I'm dying to get into once joshua gets home with the pkg =)

    I am in LOVE with white peaches right now! They are so sweet ! I top them with cacao coconut butter - so yummy.

    That popcorn is definitely addictive! And yes to that yogurt - it sounds so good, where did you get it?!?

      I just bought it at my local grocery store in the Health Market section, but I have also seen it at Whole Foods. I love that it is "Greek style!"

    I've just recently started eating the coconut milk yogurt and love it but I haven't seen this one yet! The search begins :)

    I love your breakfast! Sweet potato, apple AND yogurt?! Perfect. And I haven't heard of the skout trailbar...but if it reminds you of a larabar, sign me up!

      Yes, you do!! It has just the perfect hint of salt! The kettle flavor is really good, too!

    I've never tried Boom Chicka Pop, or any kind of prepopped popcorn to be honest, but I've been hearing a lot about it lately and I might need to change that! Glad i found your blog.

      You should definitely give it a try. I really love the Annie's brand and the ingredients list!

    That veggie, lentil and barley stew looks delicious! I'm starting to crave more and more soups now that fall is approaching! I'm such a creature of habit with my snacks too - yogurt, fruit, hummus and popcorn. Always in the rotation : )

      Yes, I feel like I have been eating veggies with hummus, fruit, and popcorn as night time snacks for months now! ;)

      Isn't it the best? Popcorn is seriously my FAVE snack right now and I just LOVE the Annie's brand!

    Bananas are my favorite pre-workout snack in the morning. It gives me some needed energy, but aren't too filling.

    I should probably start having a little snack before my morning workouts because I'm always so hungry afterwards. Do you not get too full when you eat before spin?

      I never eat too much before my workout (because honestly I'm not usually hungry right away), but a cup of Cheerios or half of a banana seems to do the trick for me!

    Bananas are my go-to before a workout as well! It seems like they're one of the few foods that won't make me feel nauseated during an intense workout. And you're right - spinning IS awesome! It seriously kicked my booty. I'm pretty sure 70-year old men were pedaling faster than me ;)

      Bananas are just awesome!! :D And isn't spinning SO fun? I am already addicted. And I totally hear you...I feel like I am majorly lagging behind the people who are 2-3 times my age!

    Love that bowl that you have your fruit in :) A spicy and sweet stir fry sounds delicious. Can't wait to hear what you used for the seasoning.

      It mostly consisted of Bragg's Liquid Aminos, teriyaki sauce, sriracha sauce, sesame oil, and Truvia (or sugar). TASTY!

    I just jumped on the sweet potato and PB train recently.... where have I been?! It's amazing! I also looove Boom Chicka Pop :)
