Hi everyone! It is an exciting day around here in Clean Eating Veggie Girl land! Not only am I (finally) back from my two-week long blogcation, but today is a momentous day for me. It has been exactly one year since I wrote my first Clean Eating Veggie Girl blog post.
Man, how time flies! I cannot believe that it has already been a year. I have experienced a lot of changes in my life both personally and professionally over the past year, and throughout all of that I think that I have become a better blogger. I think (or at least hope!) that the quality of my writing has improved, my posts have become a bit more “professional,” my pictures are a bit prettier ;), and my creativity in the kitchen when it comes to vegetarian and vegan cooking has blossomed. I have been so excited to experience these changes with you and so appreciate all of your support and your following. I hope that you will stick around for another great year!
Now on that note, let’s take a look back at some of my favorite recipe posts that I have shared over the past year. I selected one from each month of the year. It was so tough to narrow down the choices, but a lot of these stuck out in my mind as favorites, and hopefully some of them are favorites of yours, too! If all else fails, maybe you will find some new recipes to try out!
It is quite fitting that I share this recipe since it was my FIRST recipe ever! I really need to make this Spinach, Tomato, Onion, Artichoke, Basil Pizza (holy long title!) again soon!
I love this Corn Chowder Soup. It is just so darn comforting!
This has definitely been one of my most popular recipe: Vegetarian “Meatloaf!”
How can you say no to something that combines two of the greatest foods around? This is a Chili Soup Pizza!
I am just a bit obsessed with this Vegetarian Tater Tot Casserole. It is by far one of my most searched for recipes.
It wouldn’t be an anniversary post without mentioning at least one veggie burger recipe. These Chickpea Veggie Burgers are some of my favorites!
I think that this may be one of my most favorite recipes from the entire year, creativity and taste-wise! Go check out the recipe for this Thai Chickpea Pizza ASAP!
This little gem of a recipe combines two of my favorite things: Guacamole and cauliflower pizza crust. You must make these Guacamole Cauliflower Crust Breadsticks!
This is definitely one of my simplest recipes that I have here on the blog. It also might be one of the tastiest! Plus, you cannot beat a good slow-cooker recipe. I have been eating this Slow-Cooker Pea and Carrot Rice Soup all year round.
I really love this recipe for Hot and Sweet Pepper Jelly Tempeh. It is beyond easy to make AND beyond delicious!
I don’t think that this one needs much of an explanation. These Butternut Squash Tostadas with Zucchini and Carrot Tostada Shells are just plain good!
