Now That’s a Veggie Pizza!

Lately I have had a serious craving for pizza.  However, I was also craving something healthy and not drenched in grease (not to say that I don’t indulge in this from time to time!).  I decided to create my own pizza using just a few ingredients.  This was seriously such an easy and delicious dinner to put together!

Spinach, Tomato, Onion, Artichoke, Basil Pizza

Ingredients: (these measurements are not exact measurements, so use the amount that you’d like!)

1 whole wheat pizza crust (you can make your own or buy a pre-made one- I chose pre-made)
pizza sauce (I prefer Contadina brand in the squeeze bottle so that I do not waste any leftovers)
4 ounces shredded part-skim mozzarella or pizza cheese
1 can (approximately 15 oz) of quartered artichoke hearts, drained (I only used about 2/3 of the can)
1 tablespoon of EVOO (extra virgin olive oil)
1 clove of minced garlic
approximately 3 cups of spinach, chopped
half of a small onion, diced
cherry tomatoes, sliced
pizza seasoning
sweet basil seasoning

1. Preheat your oven to the specified temperature on the pizza crust package that you have purchased

2. Heat EVOO in pan over medium heat.  Add garlic and onions and cooked until golden brown (approximately 5 minutes).

3. Add spinach and cook until wilted (Approximately 3 minutes).  Set aside.

4. Spread sauce onto pizza crust.

5. Chop ends off of artichoke hearts.  Slice the remainder of the quartered artichoke hearts in half.  Place artichokes onto pizza.

6.  Add cooked garlic, onion, and spinach mixture to pizza.

7.  Place half of cheese onto pizza.

8.  Add tomatoes to pizza.

9. Finish off the pizza with the remainder of your cheese.  Sprinkle on pizza seasoning and dried sweet basil.

10. Bake (directly on oven rack) approximately 10-14 minutes (or however long is specified by the pre-made crust package).

 

 

 

 

 

I also made a sausage, green pepper, and onion variety for my dad and brother..sorry, no picture!

So tough….probably spinach or pineapple for me!
