Easy, 5 Minute Mediterranean Wrap

I made a delicious and nutritious wrap today for lunch at work.  It only takes about 5 minutes to prepare the ingredients in order to make the wrap (I assembled it at work).  This is also a great way to use up several of the leftover ingredients from the pizza in the last post.  The necessary ingredients include:

 

 

 

 

 

1 Flat Out wrap (I prefer the Harvest Wheat variety) or the whole wheat wrap of your choice
Spinach
Chopped tomatoes
Chopped quartered artichoke hearts (drained)
Chopped zucchini
Chopped red onions (I only had white so I had to make do)
2 tablespoons of hummus (I am currently loving the Athenos artichoke garlic variety)

All you need to do is assemble the ingredients into the wrap, cut the wrap in half, and enjoy!  You can also add cheese to this wrap, or if you are not a vegetarian, you can add the meat of your choice to the wrap.  This wrap pairs well with an apple, carrots, or a Greek yogurt.

Speaking of Greek yogurt….

I am loving the new Dannon Light & Fit Greek yogurt.

This yogurt has only 80 calories, 6 grams of sugar, 0 fat, and packs 12 grams of protein.  I have only tried the strawberry variety (it also comes in blueberry, cherry, and vanilla) and it is so delicious.  I love to top my yogurt with additional fresh fruit (strawberries, raspberries, or blueberries) to give it even more flavor.
