Mastering The Perfect Pancake

Hi! I’m Katie from Daily Cup of Kate– a blog where I share a passion for healthy eats, great workouts, and the occasional glass of wine or craft beer– hey, keep it balanced,right? I am excited to be doing a guest post for Hannah today, as she was one of the very first blogs I began following once I started blogging myself not too long ago!

It’s no doubt breakfast is one of the most important meals of the day. It provides you with energy and nutrients to fuel you throughout the day, revs up your metabolism, keeps your heart healthy and so much more.

Today I would like to share one of my favorite breakfasts- the pancake! If you are a reader of my blog, you know I have been eating pancakes for breakfast since, well, forever. It’s satisfying, nutritious, and delicious! Here’s how to master the perfect pancake:

1. Place 1/2-1 banana in a bowl and mash with a fork.

2. Add 1/4-1/2 cup of fruit. I usually choose between:

-Chopped Strawberries

-Blueberries

-Chopped Apples

-Pumpkin

-Cherries

3. Add your egg/egg substitute

-1 Flax Egg

-1 Regular Egg

-1/4 Cup Egg Whites

4. Add 1 tablespoon of the following (optional)

– Shredded Coconut

– Flaxseed

– Chia Seeds

– Nut Butter

– Chocolate Chops

– Chopped Nuts

5. Add 1 Scoop Of Your Favorite Protein.

The combinations are endless, but they always turn out delicious! Once all ingredients are mixed together, heat a small skillet on low heat, carefully flip when bubbles start to form on your pancake, and cook on the other side for just a minute or so. Here’s a recipe for one of my favorite pancakes:

Ingredients:

• 1/2 banana

• 1/2 cup chopped strawberries

• 1/4 cup egg whites

• 1 TBS peanut butter

• 1 scoop of vanilla protein powder

• Dash of cinnamon

Directions:

1. Mash banana with a fork in a small bowl.

2. Add egg whites, protein powder,milk, peanut butter and cinnamon. Mix well.

3. Lightly mix in 1/4 cup chopped strawberries.

4. Heat small skillet on LOW heat. Pour batter in skillet.

5. Once bubbles start forming (it takes a bit) , flip the pancake over carefully and cook for just a minute or two. Don’t flip too soon or you will have a mushy (but still very delicious) mess.

6. Top with remaining chopped strawberries and enjoy!

Feel like you don’t have time to make these in the morning? Do your prep work on Sunday night! These pancakes freeze well and all you need to do is pop them in the toaster or microwave and voila!

Thanks Katie!!  Don’t these pancakes look absolutely delicious?  I LOVE fruit in my pancakes and I have been wanting to try making protein pancakes for a while now.  Katie sure makes it sound easy, doesn’t she?  I also LOVE that these can be made vegan.  So, so cool!  I cannot wait to try these :).  I also love Katie’s idea of freezing these and popping them into the toaster.  That would certainly make for a super simple and quick breakfast.
