Happy Wednesday!! And…happy last day of July! Crazy, huh? But before we get too ahead of ourselves, let’s focus on Wednesday and What I Ate Wednesday Monday!
Breakfast
Breakfast was my current addiction: overnight oats! This is actually a recycled picture, but my overnight oats contained cocoa and I topped them with Arrowhead Mills Puffed Kamut cereal, raspberries, blackberries, and blueberries. It was deeeelicious.
Mid-Morning Snack
A banana? You betcha! 😉
Lunch
I fixed up a big batch of my Lentil and Cabbage Casserole on Sunday night, so lunch was easy peasy (and delicious!).
I also ate an apple on the side.
Afternoon Snack
Before heading out for a walk after work, I snacked on these:
I know, eating seaweed sounds weird. Trust me, I was even skeptical at first. But…I LOVE these!
Dinner
Dinner was two spicy tortilla chip bean burgers (more on these in a later post) and roasted brussel sprouts. It was YUMS!
Evening Snacks
And finally…I snacked on:
…veggies with hummus…
…and air-popped popcorn that I sprayed with coconut oil spray and topped with sea salt, nutritional yeast, dill, and curry powder. Strange combo? Maybe….but oh, so good!
