It’s Wednesday! And more importantly, it is Wednesday night, which means that the work week is more than halfway over. We are almost there people. Keep on pushing through! 🙂
And now that I am finished with giving you a pep talk for the rest of the week…let’s get to the eats, shall we?
What I Ate Wednesday
Breakfast
Breakfast started out with two pieces of toasted organic sprouted Ezekiel 100% whole grain bread- one smeared with almond butter and sprinkled with cinnamon and the other topped with TJ’s cranberry apple butter.
I paired my toast with a bowl of Greek vanilla yogurt topped with fresh strawberries and blueberries. It was a darn tasty way to start the day!
Snack
My mid-morning snack at work was the usual…a banana!
Lunch
For today’s lunch I packed a bowl of “No Chicken” Noodle Chickpea Soup topped with crushed saltine crackers. And yes, this is a picture from my dinner last night…trust me, this is much prettier than a picture of my plastic container at work would have been ;). I love this soup every time that I make it. It is absolutely perfect for the frigid temperatures here in the Midwest right now, too.
For dessert I ate a Red Delicious apple…and a very oddly shaped apple, at that!
Snack
Before heading to the gym after work, I snacked on a Cherry Pie Larabar. I love these bars! They are so tasty and the ingredients lists are always fantastic. This bar only contained three ingredients: dates, almonds, and unsweetened cherries. Now that is impressive!
Dinner
As I normally do on Wednesdays, I planned my dinner using the Happy Herbivore Abroad cookbook. Tonight I prepared two dishes: Masoor Dal and Saag. Both are Indian dishes (I am currently obsessed with Indian food), and contained two of my favorite foods right now: lentils and spinach. I know, they do not look very pretty…but trust me, they were good!
Snacks
Snacks this evening included/will include:
Carrots and celery with hummus
Fresh blackberries
TBD: Either microwave kettle corn or lentils chips. I haven’t decided just yet!
