In celebration of Friday and the return of me sharing my favorite recipes from other bloggers, I have compiled a list of some seriously tasty dishes. I have been craving and eating this dish like crazy! I got the idea for this Split Pea Soup with Tuna and Toast from Paige. I have to admit that when I first heard her mention it, I was a little uncertain. I mean it sounds like a bit of a strange combination, and it certainly does not look all that pretty. But… I fell in love with the combination the first time I made it and have eaten it at least three times since. There is just something so comforting, filling, and delicious about this meal. It comes together in under ten minutes (yay for lazy work week nights), and it is gluten-free-friendly. I’m not going to lie, I could probably eat this every single week and not get bored. Recently I made it again and added a fried egg on top with some sriracha sauce. It was the bomb. Stop being a judger (seriously, it is never going to look pretty) and start being a lover.
Try to avert your eyes from all of that amazing guac for just a second. I want to talk about Rachael’s recipe for her Spicy Corn and Quinoa Bowl that you see underneath! This recipe is certainly one of the easiest meals that I have made over the past month. You literally throw everything into one pot, let it cook, and then top it with delicious foods like avocado (guac for me), sriracha, etc. I made it on a lazy Saturday night and ate the leftovers for lunch for the next couple of days. It reheated great, tasted delicious, was super healthy, and kept me full for hours <– all must-haves for me when it comes to my main meals. If you are a quinoa lover, you will be in heaven with this dish. If quinoa isn’t your thing, I imagine it would be just as tasty with brown rice.
For those of you who are quinoa lovers, here is another recipe you must try out. It pretty much goes without fail that I eat a recipe from Alexis at least one night each week. Alexis posted this Quinoa “Fried” Rice recipe the same day that I shared my Chickpea and Veggie Fried Rice. What can I say? Great minds think alike! As soon as I saw it, I pinned it and added it to my meal plan for the next week. Veggies, quinoa, and a delicious sauce with sriracha in it. What’s not to love, right? Right! I made a big batch of this and ate it for dinners and lunches throughout the week. The sauce was perfectly spicy, but did not leave my mouth on fire… just the way I like it! If you are a veggie lover or are just trying to get more of them into your day, this is the perfect solution. It absolutely reheats beautifully, too!
I have mentioned a couple of times this past month that the spring weather has left me craving salads in a big way. So when I laid eyes on Cassie’s Tortilla Chopped Salad with Black Bean Salsa and Ranch, I knew that I had to make my own vegan, gluten-free version. The verdict? Delicious. I am now obsessed with topping all salads with this black bean salsa. I hardly even needed much dressing since there was plenty of flavor already going on with the salsa. I served my salad alongside warm corn tortillas instead of tortilla strips. They were perfect to scoop everything up in, and are my new favorite accompaniment to Mexican-style salads. This salad is the epitome of summer, and I love it.
Now I don’t want to hear any excuses about not having delicious, healthy, and easy meals to eat. I hope you can use all four of these recipes in your meal plans for the coming week. Go on. Jump out of your comfort zone and make the crazy soup/tuna/toast combo. I promise you will love it if you are a comfort food kind of gal/guy.
