I’m scratching the small talk this morning and getting straight to the food… the What I Ate Wednesday food! Most Wednesdays I share a peek into a day of my weekend eats. I decided to mix things up this week and show what I ate on a work day during the week. Here are my mostly plant-based eats from Monday:

What I Ate Wednesday: February 25, 2015
I always, always start out my workday with a green smoothie. I like to refer to it as “breakfast #1.” This particular smoothie contained unsweetened coconut milk, Vega One chocolate protein powder, frozen banana, frozen spinach, frozen cucumber, and fresh spinach. I swear, you cannot taste allll of those greens. Instead, it tastes like drinking a chocolate milkshake for breakfast!
For the past several months, I have been making up a big batch of oats every Sunday for breakfasts for the week. This particular batch included unsweetened coconut milk, pureed butternut squash (it’s actually sweeter than pumpkin), cinnamon, coconut sugar, flax seed oil, and quick oats. I also bring a small container with a couple of tablespoons of extra milk so that it gets creamy again when I reheat it. Lately, I have been adding a big dollop of sunflower seed butter on top, too!
Lunch was a bowl of leftover vegan lentil chili that I made on Saturday in the slow cooker.
I ate it alongside a couple of brown rice cakes. I love crackers in my soup/chili, but lately I have been crushing on rice cakes in their place.
I needed several snacks to get me through the afternoon. It was a Monday, after all. I started with this little baggie of baby carrots.
Next up was half of this container of homemade kale chips. Buying prepackaged kale chips is easy (and expensive), but the homemade ones are always my favorite. This is my tride and true go-to recipe.
Finally, I snacked on this organic gala apple right before the drive home from work.
I ate dinner around 7:00. I reheated three Vegan Lentil, Kale & Salsa Verde Enchiladas that I had made on Sunday night. I am truly obsessed with these. I love so many of Alexis’s recipes, but I think I have made this one the most!
My evening snacks were the usual. I am fairly predictable when it comes to food after dinner. I ate a small bowl of red seedless grapes…
…with a side of a giant bowl of popcorn. Sweet and salty for the win!

I always just eat my oats plain, but it might be time to jazz them up a bit, haha! I need to pick out some of the yummy combos you’ve come up with and get all the supplies! That way I have no excuse when I’m super lazy in the morning

I like ACV and egg whites in my oats–seriously! I have the recipe on my blog and it is amazing (with or without the egg white). I’m pretty sure that carrots might be a desert island food for me. I love the damn things!

It’s so good! I love pumpkin in oats, but I honestly think butternut squash is EVEN BETTER.
I always love your WIAW posts – they’re meals after my own heart! Gosh I miss having access to Vega products in Thailand. Apparently they don’t even have them in Australia, where we’re moving to next – I think something to do with licensing requirements and the hemp ingredients?
I’ve been madly obsessed with banana smoothies and fried tofu lately (pan fried in coconut oil at home, and I don’t want to know WHAT they are frying them in at restaurants lol).

YEA! B-squash in oatmeal! That’s so good! I’ve wanted to eat oatmeal this week….but my dorm is SOOO hot that I always need something COLD when I wake-up….cereal it has been :/
You can never ever go wrong with cereal. That is still one of my go-to easy breakfasts 🙂

I love a good smoothie as my first breakfast too! The Vega Sport chocolate is quickly becoming one of my favorite additions. Also, butternut squash in oatmeal is an amazing idea! You make me want a whole bowl of it right now!

I SO look forward to these posts, and I’m so glad that I’ve found a fellow rice cake lover. There was a time when I would sit down at night and chow through an entire bag of the plain unsalted rice cakes in one sitting. I figured, “hey, at least it’s better than chips!”.
I love when I find other rice cake lovers out there! I swear, they are one of the most versatile foods EVER 🙂

It is definitely one of my favorite ways to eat my oats! I find butternut squash to be a bit sweeter than pumpkin, so I actually prefer squash over pumpkin in my oatmeal.
