That is quite the title, eh? (<–I think I secretly wish I lived in Canada). It may be a long and complicated title, but I could not leave out any one of the delicious ingredients that make up this grilled breakfast sandwich. But do not worry. This sandwich is far from complicated. I often combine peanut butter and bananas, and I have perfected the grilled peanut butter and jelly sandwich, so why not combine the two into one delicious grilled sandwich to eat for breakfast- or heck, for lunch and dinner, too!
Oh, and for those of you who do not like blueberries (yes, those people do exist- cough, cough my boyfriend), feel free to sub in any fresh fruit that you would like. I imagine raspberries, strawberries, blackberries, and grapes would all be delicious. Now I am kind of wanting to try a combination of all of those!
Peanut Butter Blueberry Banana Breakfast Sandwich
Servings: Makes 1 sandwich
Ingredients
2 pieces whole wheat bread (I use Ezekiel bread)
1-2 TB coconut oil
2 TB peanut butter
1/2 small banana or 1/3 medium banana, sliced
8-10 blueberries
cinnamon, a couple dashes
Directions
1. Heat nonstick griddle pan over medium heat.
2. Spread one side of each slice of bread with coconut oil.
3. Place one slice of bread (coconut oil side down) onto griddle. Top with peanut butter, banana slices, blueberries, and cinnamon.
4. Place second slice of bread (coconut oil side up) on top.
5. Grill for approximately 3-5 minutes, or until the bottom slice of bread is golden brown.
6. Flip the sandwich carefully and cook an additional 3-5 minutes.
Slice that baby on a diagonal and sprinkle the plate with an additional dash or two of cinnamon to make it look oh-so pretty!
Not only are the berries completely customizable in this sandwich, but I imagine that this would be equally delicious when made with either almond butter, cashew butter, or sunflower seed butter. I am pretty sure that the possible combinations are endless, which is pretty great because you will likely get hooked on this sandwich and want to make it every morning…or evening, because I totally eat this for “brinner,” too!
Oooey gooey deliciousness right there.
Oh, and after making vegan french toast for breakfast recently (more on that in a future Friday Foodie Favorites post), I am quite certain that using french toast for this sandwich would be absolutely spot on. Seriously, go try it and let me know how it turns out!

Wow! Let me first say your site looks fabulous! Did you work with a designer?
This sandwich looks awesome. I’m eating pb puffin cereal which is almost as good as this 🙂
Thank you!! Yes, I did! Someone designed my header and then another person did the layout for me.
PB Puffin Cereal is AWESOME!
I love making sandwiches like this! The dorm I lived in actually had a panini station where grilled PBJs were regularly in the rotation, and I’ve been hooked on warm, melty PB sandwiches ever since. Yum!
Oh, yum!! That sounds like a fantastic dorm. Grilled pb & js are pretty spectacular!
Oh wow, what a great idea! I am not a fan of peanut butter and jelly, but love fresh fruit with peanut butter (I know, weird). Thanks for the recipe!
Haha, SUPER weird!… jk! 😉 PB and fruit is a fantastic combo. My favorite, though, is probably PB and chocolate!
So my mouth is totally watering right now! If only I were home, I’d be making this for breakfast! It looks amazing!
Thanks so much, Holly!! I am loving it a lot right now because it is tasty AND super duper easy to throw together.
Oh my…so simple, yet soooo delicious! I am kind of upset that I already ate breakfast this morning, because I would absolutely eat this today!
Mmmmm and putting on the griddle pan just takes it over the top.
You will just have to eat it tomorrow, now won’t you?? 😉
Perfection! I love my pb, banana, blueberry and kale smoothie! They definitely go well together! Num!
I seriously need to start adding nut butter to my smoothies. I don’t know why I have not done it yet.
Omg I swoon. I mean, I’d be replacing the PB with AB, but that combo is definitely a winning one. I usually toast my sandwiches in a toaster oven to make them all crispy and gooey, but I can imagine that tossing them on the griddle would be amazing as well.
Yes, replacing the PB would AB would be fantastic!! I am definitely going to have to try that. I think using Justin’s vanilla AB with this combo would be pretty spot on ;).
Hi Hannah! Thanks so much for posting this. I love this flavor combination for pancakes and oatmeal and am so looking forward to trying the breakfast sandwich.
Stay warm!

Thank you, Sarah!! I totally agree that this is a killer combination when it comes to pancakes. I also LOVE it with waffles!
ahhhh yum. I’m getting into spring and summer blueberry mode. I just made muffins with them and now I’m hooked for the warm seasons. I bet this is so good. And just remember, that title will be good for SEO if someone is craving all of those things at once 🙂
Haha, TOO funny!! I totally did not think of that, but you are right! 😉
Love the blueberries in this 🙂 great addition!
Thank you!! I really loved the addition, too! 🙂
This sounds so good! I don’t like jelly (unless it’s my grandma’s best friends homemade blackberry) but I do love fruit with peanut butter. This would be a great treat to have for a weekend breakfast! Your crazy blueberry hater boyfriend can join mine who won’t eat cookies. Like who doesn’t like blueberries or cookies?
NO COOKIES?? Oh geez..that is SO wrong! And yes, I am always a little suspicious of people who do not like blueberries 😉
Can’t believe your boyfriend doesn’t like blueberries! I love them. My bf doesn’t like olives which I love.
This recipe sounds simply yet so delicious. Nom indeed 🙂
Crazy boyfriends!!! 😉
Yum! This looks amazing!

Thank you, Jill, and thank you for stopping by! Don’t be a stranger! 🙂
I so wish I had bread in my house right now. This looks so delicious!
It is pretty darn delicious! I recommend going to the store for bread ASAP! 😉
