First off, Happy Halloween everyone!! While Halloween is not one of my most favorite holidays (I am more of a Thanksgiving and Christmas kind of girl), I still appreciate and enjoy the sentiments of dressing up in costumes and eating tasty Fall-like treats. I am pretty sure that we are all very aware that Fall screams pumpkin and squash. I honestly am not sure if I have gone a day in the month of October without having eaten at least one serving of these tasty Fall foods.
I may be going pumpkin/squash crazy, but I have also been going crazy for my other favorite Fall-like food: apples! I have been incorporating them into my overnight oats, eating them as snacks, making homemade applesauce, throwing them into my favorite soup, and now…
…put them in my sandwiches! Combining three of my favorite foods – apples, peanut butter, and bread – just makes sense, don’t you think?
Grilled Peanut Butter and Apple Sandwich
Servings: Makes 1 sandwich
Ingredients
olive oil or coconut oil cooking spray
2 TB coconut oil
2 pieces sprouted or whole wheat bread (I used Ezekiel brand)
2-3 TB peanut butter
1/3 apple, sliced (I used a Gala apple)
Directions
1. Slice your apple into pieces that are about 1/4 inch thick.
2. Spread one side of each piece of bread with coconut oil. Set aside.
3. Heat a small skillet over medium heat. Spray with cooking spray.
4. Place one slice of bread onto the skillet, coconut oil side down.
5. Spread this piece of bread with peanut butter.
6. Top the peanut butter with the apple slices.
7. Top with additional peanut butter, if desired.
8. Place the second piece of bread on top, coconut oil side up.
9. Cook the sandwich over medium-low heat for approximately 5-7 minutes, or until golden brown.
10. Carefully flip the sandwich and cook the second piece of bread for an additional 5-7 minutes, or until golden brown.
11. Cut your sandwich at a diagonal. This is a pretty important step ;). Or, should you choose, cut it in half or eat it whole. I highly recommend the diagonal cut, though! There is just something so cozy and homey about it to me.
The flavors and textures involved in this sandwich are taaaasty. We are talking crispy bread, crunchy apples, and creamy peanut butter. Basically, this is a good sandwich. Oh, and did I mention that it is pretty much impossible to mess up? You really can’t find a more simple “recipe.”
This sandwich is also super versatile and can be changed up to meet your cravings. You can use any type of nut or seed butter in place of the peanut butter- think almond, cashew, or sunflower seed butter. All of these would be delicious compliments to the apples and bread. You can also change up the flavor of the sandwich by using either a sweet apple or a sour apple. And finally, great creative with add-ins. I have a feeling that adding cinnamon would be a great compliment and that adding a drizzle of caramel or honey would really take this sandwich over the edge.
I think it is official. Fall is probably my favorite time for seasonal foods, and this sandwich is part of the reason why.
What are you dressing up for Halloween as this year?
My team at work is dressing up as the Publisher’s Clearinghouse Prize Patrol. Hopefully I”ll have some awesome pictures to share soon! 😉

Oh man! I never thought to try this! Yum!
Sometimes the most obvious combinations slip our minds…it’s a good one, though!
We used to have grilled PB&J or grilled banana sandwiches growing up. Apple is such a great idea!
I’ve actually never tried the grilled ones with bananas, but I definitely need to because I love the pb and banana combo.
My favorite sandwich is a grilled nut butter and banana sandwich, so this doesn’t sound that odd at all! I suppose it depends on what texture you want–mushy banana or crunchy apple. Delicious either way!
I definitely need to try the grilled pb and banana idea. It sounds super tasty!
This is genius! I can’t wait to try this:) happy Halloween!
Thanks so much!!! You too! 🙂
Yes! One of my favorite snacks is an apple with some peanut butter – but I’ve never thought to make a sandwich out of it! Great idea : ) Happy Halloween!!
Apples ALWAYS taste better with a little nut butter!
My favorite foods on a sandwich! I have made this before and I really like it on Ezekiel Cinnamon Raisin Bread. Although I like anything on that cinnamon raisin bread lol…I need to start using more coconut oil in my cooking, healthy and adds good flavor.
Awesome idea to use the cinnamon raisin bread. I bet that is SUPER tasty!
Well, I’m being lame Jane and not dressing up for Halloween this year…wah waaaah….I am, however, drinking a bunch of wine with the ladies tonight! 🙂 Your sando looks deeeeelicious!
Wine and girl time totally trumps dressing up!! You are a smart woman! 😉
ooooohh can’t wait to see pics of your costume!! And I feel like apple totally gets the shaft when it comes to fall foods – everyone is all about the pumpkin and squash – but man I love apples!!!
Apples totally do get the shaft, don’t they?? We need to step up our game and start giving them some more love! 😉
Yum yum, looks super good! I have some apples I have got to eat!!
Apples for the win! I swear, I don’t think I go a day without eating at least one!
Is it lunchtime yet? Because I want this! I’ve never tried it with apples, but I’ve gone the grilled AB and banana route, and omigosh… just heavenly. I can only imagine how amazing it must be with apples.
Let me know if you give it a try! Using AB would be SO fabulous!
This sandwich is the key to my heart.
Haha, pretty much anything with nut butter is the key to my heart! 😉
This is genius! Perfect meal for me because it’s like dessert- perfect for today when all I can think about is Halloween candy 🙂
Haha, SO true!! You can’t beat having something sweet for lunch or dinner every now and then!
I agree that the cutting in diagonal is a very important step – somehow it just tastes better like that 🙂
I love this combo, sounds so delicious!
It totally does!! Weird, huh?? 😉
Happy Halloween to you, too! I agree with you on being more of a Thanksgiving/Christmas fan. Especially Christmas! Love the sandwich! I made a caramel apple grilled cheese sandwich last year and while most of my readers were appalled and grossed out by it, it was sooo good!
Silly people!! That sounds delicious to me!! I am a big fan of the sweet/savory combination, though, so I’m sure that makes a difference.
Omg. Two of my favorite foods in the world! How did I not think of this?!
I had the exact thought when I first got the idea! It’s like the most obvious thing, but somehow I had never made it!
LOVE IT!! Apples are my favorite fall food.. I think I might even like them more than pumpkin! Lately I’ve been eating toast with peanut butter and apple but I never thought to make a grilled sandwich! It’s definitely happening soon 😀
I definitely need to try making this in toast form for breakfasts…that’d be awesome!
grilled sandwiches are so much better than regular ones, aren’t they?
They REALLY are!! I love the warm and crispy bread. Plus, melted PB is the best!
I can think is “why haven’t I tried this before?!” definitely combines 3 of my favorite things too 🙂
And my husband claims that sandwiches always taste better when they’re cut diagonally, so he’s with you on that!
Haha, love it! He is one smart man!
Mmmmm sounds super delicious! I’ve never made a sweet sandwich other then stuffed french toast!
You should definitely give this a try! And stuffed french toast? That sounds awesome. I need to try that.
So. Don’t think I’m crazy, but put a piece of cheddar on there next time. HEAVEN!
I definitely don’t think you’re crazy. I love the sweet/savory combo, so that sounds perfect! Plus, fruit goes great with cheese!
girl I am loving the idea of this sandwich!!!
Thanks so much!!! Let me know if you give it a try! 🙂
