I know that I said I would be back on Tuesday with an update, but I decided to wait and share my eats with you on What I Ate Wednesday. I ate some seriously good food this past weekend at the Healthy Living Summit in Minneapolis, MN. Let’s take a look at some of my yummy eats!
Friday
On Friday evening I joined some of my favorite blogging buddies for dinner at Kindee Thai. Becky and Katie organized this dinner and I was so excited for not just the great food, but also the amazing company.
I ordered the Vegetable Stir-Fry with brown rice and added fresh tofu. This was seriously SO good. Becky and Katie both did an awesome job of selecting a tasty (and vegan-friendly!) restaurant. I would definitely eat here again.
Before heading to bed at the end of the evening, I snacked on some Pop Chips!
Saturday
Saturday began with breakfast at the conference. I had oatmeal with a strawberry and basil chutney, slivered almonds, and homemade almond butter that Kim brought along with her and generously shared with me. On the side I had tons of fresh fruit. The oatmeal left a bit to be desired (it wasn’t very hot), but the fruit was amazing.
I also had a green smoothie made with the new Ninja blender. The smoothie contained kale, spinach, bananas, mango, and pineapple. It was SO good!
Mid-morning we had a snack break sponsored by Blue Diamond. I munched on a package of their natural almonds.
Lunch was served at noon. I was really pleased with the vegan options. I had a Mexican-themed salad, which I topped with oil and vinegar, and stir-fried vegetables topped with lettuce, tomatoes, jalapenos, salsa, and spicy tofu. It was tasty!
I also made my own bowl of soup at the Build Your Own Soup Bar (cool concept, right?). My soup contained vegetable broth, mushrooms, peas, artichokes, peppers, and onions. Super simple, but delicious!
In the afternoon I snacked on an apple (sorry, no picture)
I went to dinner with Kim, Emily, Danica, Kelsey, and Laura at The News Room.
I started dinner off right with a beer. Hi Laura! 😉 You know you are with blogger friends when everyone is taking pictures!
I chose the Mexican Jumping Bean Flatbread for my entrée. Holy cow, this thing was HUGE. The flatbread was thin and crispy and topped with black bean chili hummus, scallions, red onions, cilantro, jalapenos, cheddar cheese, mozzarella cheese, and sriracha sour cream. Sounds tasty, right? Well it most definitely was. I shared a piece with Kim (she loved it, too!) and then I shoveled in the rest. I was not letting a single bite of this go to waste.
My evening snack was some delicious Annie’s sea salt popcorn.
Sunday
My final HLS meal was breakfast on Sunday morning. I had one piece of toast topped with peanut butter, breakfast potatoes with ketchup (yum!), and tons of fresh fruit. I seriously could not get enough of the fresh fruit. I probably could have eaten the whole tray. And trust me, it was a large tray!

That FLATBREAD!! Holy cow – I never knew they made those while I lived in Minnie and now I’m sad I missed it, haha! The eats were so delicious at HLS so I’m glad you used them for your WIAW 🙂
You did an awesome job with the Kindee Thai restaurant pick. And yes, the flatbread was AMAZING. You’ll have to go there when you are back in town.

That flatbread does look really good! I’m glad you were able to find so many great vegan and vegetarian options while you were there. I eat meat but my favorite stir frys to order out are tofu, I have attempted to make tofu a few times at home but always mess something up so its a great treat when out to eat.
I LOVE tofu in my stir-fries…I think it is my favorite addition! 🙂
Going to have to make up sum siracha sour cream for my next taco night! Good idea!

that flat bread looks epic! I was so happy to see the tofu at Saturday lunch too, I’ve never been to a hotel conference that actually had tofu!

I think the food posts are the recaps that I look forward to the most from blogging conventions. That and blogging tips which there seem to be an abundance of this year! Quite amazing. I’ve learned so much and didn’t even go. 🙂

It was!! I had a great weekend of eats :).
Everything looks amazing, especially the flatbread. I think the food would be one of the best parts of being at a healthy living conference. That and being in the company of “foodies” with similar tastes.

It was HUGE, but thin, so I was able to eat all of it except for the part that I shared…it was too tasty not to eat ;).
