Not only are three-day holiday weekends awesome due to the extra day off, but they are also awesome because they make the next work week shorter, too! We have already made it to Wednesday and it seems like we haven’t even done much. That is my kind of week! 😉 This also means that What I Ate Wednesday snuck right up on me. I remembered to photograph my Tuesday eats (at the last minute), and am quickly (and lazily ;)) writing up this post on Tuesday night. As a result, I apologize for the not so pretty pictures…but hey, you get the picture (no pun intended!).

Pre-Workout
Before heading to spin class I ate half of a banana and downed some water to hydrate. I ate the remaining half of my banana when I got home.
Breakfast
I ate breakfast at work. The first part was a “baked” (microwaved) sweet potato, which I topped with PB2 peanut butter.
I followed up my potato with a vanilla coconut milk yogurt and a white peach.
Lunch
Lunch was leftovers from Monday night’s dinner: Happy Herbivore spicy mustard chickpeas (which I added spinach to) served over brown rice.
I also ate a Granny Smith apple and some baby carrots and a La Croix sparkling water (unpictured).
Snack
After work I snacked on two Wasa crackers topped with Tofutti herb and chives vegan “cream cheese” (SERIOUSLY amazing!), sliced tomatoes, and sea salt.
Dinner
Dinner was a new recipe that I made: End of Summer Veggie Fried Cauliflower “Rice.” I’ll post the recipe soon…but not TOO soon since I have gone a bit overboard on the cauliflower “rice” lately ;).
Snacks
I snacked on a veggie/hummus plate…
…some fresh cantaloupe, black seedless grapes (so addicted), and raspberries…
…and more of this. To say that I am a bit obsessed would be an understatement ;).
There you have it. A food-centered Tuesday. Now that I have started doing spin classes, I have found that on the days that I spin my appetite is absolutely ravenous. I guess burning hundreds of calories in one class will do that to you. I’m sure not complaining. I am a snacker and I love it :).
