Basil Mint Mojito

Hi there CEVG readers! My name is Melanie and I blog over at Beautifully Nutty where I write about food, recipes, fitness, travel, and finding total happiness and wellness in life.

I was thrilled when Hannah asked for guest posts for while she is on her blogcation and jumped on the opportunity to be a guest.

Like Hannah, I am a crazy veggie lover and I’m always trying to come up with new and delicious ways to enjoy vegetables. I eat primarily gluten-free, whole, clean, no refined sugar, non-processed foods. I make sure to make room for sweet treats too! Homemade dark chocolate has become my go-to treat!

I have Ulcerative Coitis, so eating clean helps me to feel my best. This isn’t to say I’ll forever only eat clean non-processed foods because I know I will have them time and again, but I can almost guarantee that I will always be eating clean at least 80% of the time even when my colitis is in remission. It’s good for my health now and for my health in the future, so why not?! Plus, healthy food tastes great!

Anyway, on to the goods…

I am not a huge drinker but I really do enjoy a nice glass of wine or a fresh mojito every now and then. Last weekend, I went to the cabin and was planning for what to bring to drink while I was there. I really didn’t feel like aggravating any colitis symptoms with alcohol, so I was trying to think of a non-alcoholic drink I could make that would be fun and full of fresh flavor.

Looking around the house and knowing that my basil and mint were ready to be picked in the garden, I came up with the idea for…

That’s right. Basil Mint Mojitos. No refined-sugar, no alcohol, just straight up refreshing, bubbly and slightly sweet goodness.

What you will need for the mojitos:

1. 1 can of lime flavored sparkling water (plain would probably be fine too)
2. 3-4 lime wedges
3. a handful of mint leaves
4. a handful of basil leaves
5. stevia to taste
6. a fun cup if you have one!

Directions:

1. In the bottom of the cup combine the mint, basil, and stevia. Squeeze the juice of the limes into the bottom and them drop them in.
2. Using a spoon or a muddler if you have one, muddle and smoosh the ingredients together.

3. Add some ice.
4. Pour in your sparkling water.
5. Enjoy!

Fresh mint and basil are abundant in our farmer’s markets right now in Minnesota and they are so inexpensive! I bought a huge bunch of each for just $1 a piece the other day. Go fresh and local whenever you can! The taste is so much better than store-bought, and you are getting more nutrients from the herbs because they have less travel time! Farm to table is what I’m all about.

I enjoyed this beverage out on the boat but I also enjoy in the comfort of my own backyard on any given day! It is a fun guilt-free pick-me-up!
