Hello to Hannah’s readers! My name is Marisa and I blog at Uproot from Oregon, a recipe blog and way for me to stay creative and healthy in the kitchen by documenting new recipes. Hannah asked me to track what I ate for the WIAW while she takes her ‘blogcation’.. and I was happy to oblige. I normally don’t participate, but this will be a fun way for my readers to see my daily eats as well! Check out What I Ate Wednesday Friday!
Breakfast
Breakfast is absolutely my favorite meal- so I split it up and give it my full attention every morning. I will normally eat a fried or poached egg in the morning, and drink my iced coffee with soy milk in the car on the way to work.
I follow that up with a fruit and yogurt bowl at my desk at work. Today, it was lemon yogurt, berries, and a sprinkle of seedy & nutty granola with raisins.
Mid-Morning Snack
Sorry guys… no bananas are going to show up today like Hannah’s usual snack. I sometimes eat lunch early and instead have an afternoon snack, but today lunch got delayed and I snacked on an apple and chunky peanut butter.
Lunch
This lunch is very realistic for me: leftovers alongside some greens. I had some of a fajita vegetable burrito in the fridge at home, so I paired that with a salad of spring mix, red pepper, cucumber, goat cheese, and lime juice. I had a few Mary’s crackers with homemade hummus on the side.
After work, I normally head to the gym and need to keep myself well hydrated. I am bad about drinking water at the gym so sometimes I will mix ½ a coconut water with ½ a water bottle before and after working out. It keeps water interesting and tasty!
Dinner
For dinner, I had some leftover quinoa and made my Quinoa Tofu Tacos. These tacos are one of my favorite meals I’ve made since moving to Denver, as they pack a bunch of flavor and are relatively quick if you have some tofu and quinoa on hand (I normally do!). I had water with lemon and lime on the side.
Evening Snack
Just like Hannah, dinner doesn’t always cut it for me. I like to have something sweet and savory. Today it was pistachios and dark chocolate covered pretzels. Some days, it’s a walk to my favorite ice cream store (I know you understand!).
Thanks to Hannah for the opportunity to engage you all! Documenting a full day of eats is a challenge for me (hi coworkers, don’t mind me with my camera…), but it was a fun exercise in meal planning the night before. Head over to my blog for healthy, clean, and mostly veggie recipes!

It all looks yummy. I tried the coconut water…it’s not for me, almost gagged on it, that’s just me though I’ve seen where a lot of people like it.
I had a hard time liking it until I tried the stuff without pulp- the brands all taste different. It’s not for everyone though, I just love coconut flavor generally!
Love coconut water! But it has to be ice cold! Chocolate covered pretzels are the bomb dot com. LOVE them
Leftovers make a great next day lunch when added to a pile of greens, in my opinion anyway. Chocolate-covered pretzels are my favorite treat!
So I’ve always wondered if bloggers ever do “guest” WIAWs. Now I have my answer 😉

Breakfast is my all-time favorite meal of the day too! And I love your coconut water+water idea. I often have to spice up my water with fruit juice or something to get enough of it down. I like it plain all right, but there’s only so much of it I can drink! Thanks for the great guest post, Marisa!
Thanks! Yes, it’s fun to even put some slices of lemon/orange into water. More exciting because I really am not the best about remembering to hydrate.
