I still cannot believe that it is August. I don’t think that it is fully going to hit me until the very end of the month, and then I am going to be baffled about the fact that it will almost be September. I swear, I cannot handle how quickly time is moving right now. But…I am certainly not upset about the fact that this work week moved quickly and it is now Friday! TGIF! (Oh, and speaking of…who else used to LOVE the TGIF TV line-up when they were younger? I sure did!).
So, anyhow… Friday means lots of smiles 🙂 and lots of great food. Here is another roundup of some of my favorite recipes that I have tried over the past couple of weeks. Enjoy!
Friday Foodie Favorites: August 9, 2013
This first one is AWESOME:
So this looks like a regular open-faced portobello burger, right? WRONG! Do you see what is on the bottom there? No, that is not your traditional hamburger bun (that is probably pretty obvious). Instead, it is a cauliflower “hamburger bun!” I came across Caralyn’s recipe and new that I just had to try it. This probably comes as no surprise considering my love for cauliflower “rice” and cauliflower pizza crust. I decided to reduce the amount of each ingredient that the recipe called for, and just make one large bottom bun (my mushroom was huge!) to serve in the open-faced sandwich style. I loved the results! It was SO tasty. So tasty, in fact, that I really wanted to just eat it plain so that I could fully enjoy the flavors and texture of the “bun.” This is a must try and will definitely be made again…and again…and again!

Keeping in line with the sandwich theme…
…how about some mock “tuna” salad! I made The Happy Herbivore’s Mock “Tuna” Salad and served it in sandwich form. This is SOOOO good! Who needs tuna when you have my favorite bean…chickpeas! Please try this! It is protein-packed, contains healthy and whole ingredients, and the taste is out of this world. I already have plans to make this again! You really cannot beat a simple and easy recipe like this, especially on the days when you have very little time to prep lunch and/or dinner. Oh, and for the heads up…I did not have any kelp so I left that out and added in a few sprinkles of Old Bay seasoning in its place.
It wouldn’t be a Friday Foodie Favorites post without this…
…soup!! I have heard from several of you that I am not the only “crazy” person who eats soup during the middle of the Summer. As a result, I will keep on sharing my favorite soup finds! This is a SUPER duper easy soup recipe, and if you love Summertime veggies, beans, and salsa verde, then this is totally calling your name. Stephanie’s recipe for Salsa Verde 2-Bean Chili is simple, yet delicious. This certainly has some spice to it, too, so it is bound to keep you warm! 😉 I followed Stephanie’s recipe but used dark red kidney beans in place of the black beans (by accident), used vegetable broth in place of the can of water, omitted the corn, and added in some leftover zucchini and summer squash that were hanging out in my fridge. This was taaaasty! I just ate my last bowl this past weekend and I was sad when it was gone :(.
And finally, let’s talk about Becky’s awesome recipe for BBQ Tofu Pizzas!
One of my absolute favorite ways to prepare tofu is to pair it with barbecue sauce. When I saw Becky’s recipe for this pizza, I just knew that it was something that I would love. And boy was I right! This was super-duper easy to make, and absolutely delicious. You cannot beat a recipe that only involves 4 ingredients and tastes awesome. Try this one! Even if you are afraid of tofu (don’t be!), you are almost sure to enjoy this pizza. Barbecue sauce makes everything taste awesome, right? 😉
