Happy Wednesday, all!! Is it just me, or is this week draaaaaging on and on? I have been pretty busy at work, but it still seems to be slow-moving. But we only have two more days left in the work week, so let’s focus on the greatness of that! Oh, and how about we also focus on some good eats? It is time for What I Ate Wednesday…or mostly what I ate today.
P.s. Get ready for some veggie overload! 😉
Breakfast
This is exactly why I included the word “mostly” in the title of this post. I actually brought a bowl of cereal and almond milk to work, but you’ve seen that plenty of times. So instead, I am going to share with you a picture of an absolutely delicious breakfast that I ate earlier this week. I had two pieces of toasted 100% whole wheat bread, which I topped with a white bean spread (leftover from a recipe to come in the future), smashed avocado, sea salt, and blackberry jam. Oh man, this was GOOD! This is sweet and savory at its finest.
Mid-Morning Snack
Yuuup..nice and spotty!
Lunch
For today’s lunch, I brought along leftovers from Monday night’s dinner: A superfood pilaf from Trader Joe’s, which I added broccoli slaw to, and a side of roasted French yellow beans.
Afternoon Snack
My after work snack consisted of a bowl of roasted eggplant, zucchini, and kobucha squash. I have been reading about kobucha squash on food blogs for months now and this was the first time that I tried it myself. Boy, have I been missing out. I am now hooked!
Dinner
Tonight’s dinner was two plates of this: think brown rice, cauliflower rice, broccoli, carrots, onions, kale, Bragg’s, and Dijon mustard (look for more info on this dish in a future post, too!).
Evening Snacks
Welp…I have not actually eaten any snacks yet. But I foresee a veggie and hummus plate, fresh fruit, and air-popped popcorn in my future.
Veggies much? What can I say, I crave them! Not a bad thing to crave, am I right? 😉

Isn’t that squash the best! I love it after it has been roasted and refrigerated, I don’t know why but I think the flavor is stronger when it’s cold.

Love Kabocha squash! I just finished off the last of mine today 🙁 So sad! I like my bananas to be spotty too. Not too spotty, just before they reach the overripe point but definitely not green!

I was LOVING the breakfast toast, and all thanks to having that leftover bean spread. I try my best to get creative with my leftovers!

I haven’t tried the roasted squash with PB, but I love sweet potatoes with it, so I imagine it is awesome with squash, too!

Isn’t kobucha squash the best?! I love it!!! We roast it, mash it up, and make bruschetta out of it. So good!

I love your creative use of veggies!! I too have heard about kobucha, EVERYWHERE, but I still haven’t seen them in supermarkets. I wonder if they are only in certain areas of the US? I’m not sure, but I really want to experience this deliciousness.

I’m all for sweet and savory, but I’m not sure how I feel about your toast. I’d say I’ll try it at least once, but avocados rarely make it into any type of recipe… I just pop the pieces in my mouth as I cut it up. It’s a bad, delicious habit 🙂
