My camera and computer were SO not cooperating today and I was not able to upload my photos until 8:30 p.m. tonight. Therefore, this is going to be a short and sweet What I Ate Wednesday post. Here are today’s eats!
Breakfast
Breakfast consisted of a sweet and savory waffle-wich with whole grain waffles, one sunny-side up dippy egg, pumpkin butter, and nutritional yeast. Yes, it sounds weird, but it was so good!
On the side I ate a bowl of Greek vanilla yogurt with fresh blackberries and strawberries.
Mid-Morning Snack
My mid-morning snack was a ripe and brown spotted banana…the best kind!
Lunch
Lunch consisted of last night’s dinner: a Deconstructed Sushi Bowl slightly adapted from Elise’s recipe. In the bowl was quinoa, green cabbage, shredded carrots, sprouts, seitan, half of an avocado, and Bragg’s Liquid Aminos. This was seriously SO good! I will definitely be making it again.
Accompanying my bowl was a Golden Delicious apple. I am obsessed with this variety right now.
Snack
After work, I snacked on three Wasa crackers smeared with PB2 peanut butter and strawberry preserves. This was the perfect snack to tide me over until dinner.
Dinner
Dinner was African Jollof, a recipe from the Happy Herbivore Abroad cookbook. So, so good!
Snacks
Evening snacks included/will include (sorry for the recycled pictures)…
…carrots, celery, and hummus…
…fresh fruit…
…and air-popped popcorn (my current night-time snack addiction!).

I don’t like jelly but i really like the sound of adding apple butter to your egg sandwich. I love egg sandwiches with cheese and spicy mustard but the apple butter might be a great sweet/savory combination. You can never go wrong with popcorn!
I need to start adding mustard to some of my egg sandwiches. That sounds delicious!

Sweet and savory wafflewiches are my favorite!! I love the idea of adding nutritional yeast for a “cheesy” kick without the cheese, too. 😀
Everything else looks delicious, as always! I’m especially loving the nighttime popcorn–I’m munching some as I type, and dunking it in peanut butter. Have you ever tried doing that? So so good! xoxo

The deconstructed sushi bowl sounds like a great idea! And air-popped popcorn (with a drizzle of coconut oil) is definitely my nighttime snack of choice!! I love it!
I usually spray my popcorn with coconut oil spray (I finally found it at TJ’s!) and sprinkle it with nutritional yeast!
I need to make more waffle-wiches!! And that sushi salad. So much food inspiration here!

Popcorn is definitely one of the best snacks. And when topped properly (not with TONS of butter! ;)), it is a pretty guiltless snack!

It was a good combo, but I am also a HUGE fan of the sweet and savory combination. A lot of times I will use Laughing Cow cheese wedges on my waffle-wich sandwiches, too!

I really need to make a sushi bowl! I have nori which I usually use for wraps but I love the idea of a deconstructed bowl. Random meals like that are the best!

Loooove air-popped popcorn! I have been making a big batch and bringing smaller bags of it to work for snacks. It’s great sprayed with a little olive oil cooking spray and shaken with nutritional yeast.
It is just SO tasty! I love to spray mine with either olive oil spray or coconut oil spray and then top it with nutritional yeast, too! Who needs cheese and butter?
