What Vegans Eat: A Week of Vegan Eats
Today is day #4 of my vegan eats and I am now more than halfway through the week. I am feeling great about the food that I have been eating, and today I even ate out at a non-vegan restaurant as a vegan. Bizou is a bistro downtown mall Charlottesville. I am here to tell you that it is possible, people! 🙂
Day #4: Wednesday, March 27, 2013
Breakfast
I needed to use up the other half of my avocado from Monday’s breakfast, so I made another plate of avocado smothered whole wheat toast, and topped each slice with salsa and nutritional yeast.
I paired my avocado toast with a big bowl of fresh fruit: 1 mandarin orange, green grapes, strawberries, blackberries, blueberries, and raspberries.
Mid-morning I ate a banana. I figured I would spare you the picture for today ;).
Lunch
For lunch, several of my co-workers and I went to a Mexican restaurant called La Mesa. I ordered the guacamole salad (minus the cheese), which consisted of Romaine lettuce, tomatoes, and a heaping spoonful of guacamole. I also ate plenty of chips with salsa! Sorry for the lack of pictures, but I was seriously so hungry and excited for the food that I forgot to take any!
Snack
On my way to the gym I snacked on a Zone Perfect Perfectly Simple Cranberry Almond protein bar.
Dinner
Dinner consisted of leftover Creamy Mushroom Barley from The Happy Herbivore Abroad cookbook. You guys…this dish is seriously SO good. You must try it!
Snacks
My evening snacks included a veggie plate consisting of peas, celery, carrots, and hummus…
…fresh cantaloupe and a mandarin orange…
…and some Bruschetta lentil chips. I cannot get enough of these things. If you have never tried lentil chips, you really should. Not only are they delicious, but they contain a pretty good amount of protein as compared to other “chips.” Plus, you cannot beat getting to eat 31 chips for only 130 calories. Now that is my kind of snack!
