What I Ate Wednesday
Breakfast
Breakfast today was an early one! I had to be at work at 6 a.m. so I was up prepping and eating this breakfast at about 5:30 a.m. It was a great way to start the day! I enjoyed one of my current favorites: 2 pieces of Trader Joe’s sprouted wheat bread toasted and smothered with half of a smashed avocado and salsa. On the side I ate fresh cantaloupe. blueberries, and raspberries.
Snack/Break
While on break at work today I ate a banana and a Zone Perfect Perfectly Simple Peanut Crunch bar. These bars are delicious, high in protein, and only contain six ingredients!
Lunch
After work I ate a late lunch consisting of leftover Sweet Potato and “Sausage” Hash and cooked green peas. I have talked about Field Roast brand’s vegan sausage before, but I cannot rave about it enough. Whether or not you are a vegetarian or vegan, you HAVE to try this “sausage.” I think that it tastes 10 times better than any “real” sausage that I ever ate as a meat-eater!
Dinner
For dinner tonight I prepared another delicious meal from the Happy Herbivore Abroad cookbook. These Spicy Mustard Chickpeas (to which I added spinach) served over whole brown rice were delicious (definitely spicy, though!). I served them with a side of cooked mixed vegetables.
Snacks
Snacks today and tonight include: an apple, baby carrots with roasted red pepper hummus, some Cuties clementines (yum…I love this time of year!), and possibly lentil chips?
It has been a delicious day of eats! 🙂 Oh, and let us not forget the many cough drops I have consumed today…I think that the sickness is getting me! 🙁
