It is time for another “What I Ate Wednesday” October Edition!
Breakfast
Let me just say that this was a delicious, fall-themed breakfast!
I toasted 2 slices of Pepperidge Farm Pumpkin Spice Swirl bread. I have always found the Swirl breads to be delicious and when I saw this Limited Edition variety in the stores I just had to get it (the other Limited Edition flavor out now is Caramel Apple). While it unfortunately is not 100% whole wheat bread, I decided to splurge and buy it, and I am so happy that I did. I ate this toasted and plain in order to get as much pumpkin spice flavor, but I am sure it would be delicious with butter/margarine and a sprinkle of cinnamon or with natural peanut butter….basically, go buy it! 😉 I ate my “fall-themed” pumpkin toast with something that I like to call French Toast Scrambled Eggwhites. Simply combine 4 eggwhites (or more), a dash of pure vanilla, and a couple sprinkles of cinnamon and scramble. So delicious!
My mid-morning snack (though it was more like 12:30 pm by the time I ate it!) was a banana…shocking?!? 😉
Lunch
Lunch consisted of leftover vegetarian “meatloaf” and cooked green beans. Like I mentioned in the meatloaf post, there is just something about eating this meal as leftovers. Beyond delicious!
Dinner
Dinner was an Indian dished called Chana Masala. I served it over whole brown rice and with a side of cooked mixed vegetables. This is a spicy (but not too spicy) and flavorful dish. Look for the recipe on a future post very, very soon!
Snacks
Snacks I have eaten throughout the day and for this evening include:
1 giant honeycrisp apple (seriously, these apples are huge, right??)
baby carrots w/ spicy three pepper hummus
steamed broccoli w/ sea salt and Trader Joe’s 21 Seasoning Salute seasoning
a fruit plate consisting of fresh cantaloupe, strawberries, and raspberries
Thai Sweet Chili Potato Pop Chips (this will be my first time trying this flavor and I am just a little bit excited!)
