Today has been a yummy day of eats…and it’s not over yet! 🙂
Breakfast
For breakfast today I ate 2 Eggo’s Nutrigrain low fat waffles (one with natural peanut butter and a dash of cinnamon & one with low sugar grape jelly). On the side I enjoyed a new variety of apples that I tried for the first time this week: a sweetango. These apples are sweet, juicy, and delicious!
Lunch
My pre-lunch snack consisted of none other than….a banana!
For lunch I ate a salad made up of:
Romaine lettuce
spinach
carrots
onions
peas
green bell peppers
roasted zucchini and yellow squash
Bolthouse Farms yogurt ranch dressing
and….fresh cantaloupe and raspberries! The raspberries have been tasting REALLY good lately.
Dinner
For dinner I made this yummy concoction:
Vegetarian enchiladas! I ate 2 enchiladas topped with salsa and served them with a side of canned stewed tomatoes (I seriously love those things! Weird??).
Snacks
Snacks for the day consisted of:
*baby carrots w/ artichoke and garlic hummus
*1 Greek vanilla yogurt with fresh raspberries
*Steamed broccoli with sea salt
*Food Should Taste Good cheddar tortilla chips OR microwave popcorn…haven’t decided yet! 🙂
