Sweet and Sour Veggies with Rice

If you are trying to incorporate more vegetables, fruits, and whole grains into your diet and you love Chinese-inspired food, this is the recipe for you!  I give you: Sweet and Sour Veggies with Brown Rice

This recipe, which serves 4-6 people, requires just a few, inexpensive ingredients:

Ingredients

4 servings of cooked whole brown rice
EVOO cooking spray
1 red bell pepper, cut into half-moons
1 green bell pepper, cut into half-moons
1 yellow onion, cut into half-moons
3 medium carrots, peeled and cut at an angle
1 8 ounce can of pineapple chunks (in natural juices)
1 8 ounce can of water chesnuts, drained
1 12.5 ounch bottle of sweet and sour sauce

1. Cook brown rice following the package instructions.

2. Spray pan with EVOO spray.  Add veggies and saute for 3 minutes over medium heat.

3. Add the natural pineapple juices from the can of pineapple.  Cover and continue cooking until the vegetables are cooked through and soft (about 20-25 minutes).

4. Add pineapple, water chesnuts (I only used about 3/4 of the can), and sweet and sour sauce (I used about 3/4 of the bottle).

5. Add cooked rice and heat until all ingredients are warm (approximately 3 minutes).

I enjoyed this dish with a side of unsweetened, natural apple sauce.  It was delish!

Looking for another way to get more vegetables into your diet?  Try scrambling eggwhites (or eggs, if you prefer) with hot sauce, spinach, peppers, onions, or any other vegetables you like.  Top your egg concoction with salsa and add a side of fruit and you have a delicious, nutrient-rich breakfast or lunch!

Lastly, I promised that I would be reviewing several of the products that I purchased this past weekend in Des Moines.  First up: a Peanut Butter Cookie Larabar.

This was a delicious treat/snack that is vegan, has no sugar added, and only contains 3 ingredients: dates, peanuts, and sea salt!  Now that is impressive!
