If you are trying to incorporate more vegetables, fruits, and whole grains into your diet and you love Chinese-inspired food, this is the recipe for you! I give you: Sweet and Sour Veggies with Brown Rice
This recipe, which serves 4-6 people, requires just a few, inexpensive ingredients:
Ingredients
4 servings of cooked whole brown rice
EVOO cooking spray
1 red bell pepper, cut into half-moons
1 green bell pepper, cut into half-moons
1 yellow onion, cut into half-moons
3 medium carrots, peeled and cut at an angle
1 8 ounce can of pineapple chunks (in natural juices)
1 8 ounce can of water chesnuts, drained
1 12.5 ounch bottle of sweet and sour sauce
1. Cook brown rice following the package instructions.
2. Spray pan with EVOO spray. Add veggies and saute for 3 minutes over medium heat.
3. Add the natural pineapple juices from the can of pineapple. Cover and continue cooking until the vegetables are cooked through and soft (about 20-25 minutes).
4. Add pineapple, water chesnuts (I only used about 3/4 of the can), and sweet and sour sauce (I used about 3/4 of the bottle).
5. Add cooked rice and heat until all ingredients are warm (approximately 3 minutes).
I enjoyed this dish with a side of unsweetened, natural apple sauce. It was delish!
